Paruppu Podi (Lentil Powder)


Ingredients

  • Urud dhall - 1 cup
  • Red Chillies - 3
  • Asafoetida - 2 pinch
  • Pepper - 1 tsp
  • Salt - as per taste


Method

  • Dry fry the Urud dhall, Red Chillies, Pepper separately in medium flame.
  • Transfer to mixer grinder/food processor adding salt and asafoetida.
  • Grind till they become nice powder.
  • Store in a air tight container for future use.
  • Can be mixed with rice and ghee and it tastes heavenly.

Prawn Cutlets step by step | How to make Prawn cutlets | Easy snacks recipes | Non veg snacks | Cutlet recipes | Sunday special recipes


 These Prawn Cutlets are tasty cutlets which can be prepared easily. If you are a prawn lovers, never miss this cutlet recipe. These can be prepared easily as evening snacks on sundays. I am a great fan of prawns and I would prepare these prawn cutlets at least once a month. Lets see the recipe now.

How to make Prawn Cutlet

Preparation time: 15 min Cook Time: 10 min 
Total Time: 25Serves: 6

Ingredients
  • Prawns - 1/2 kg
  • Potato - 2 large (boiled)
  • Onion - 2 (chopped finely)
  • Green Chillies - 3 to 4(Chopped finely)
  • Corinder leaves - few
  • Curry leaves - few
  • Turmeric powder - 1/2 tsp
  • Coriander powder - 1/2 tsp
  • Garam Masala - 1/2 tsp
  • Chilli powder - 1/2 tsp
  • Pepper powder - 1/4 tsp
  • Bread Crumps - 1/2 cup
  • Corn flour - 4 tsp
  • Water - 1/2 cup to 1 cup
  • Oil - 2 tsp
  • Salt - as per taste


Method
  • Clean the Prawns with salt.
  • Smash the boiled potatoes and keep aside.
  • Now in a small pan, add the prawns, 1/4 tsp turmeric powder and sprinkle some water and cook, till the prawns become curly in shape.
  • Choped the prawns with a spatula or grind it in mixer and keep it aside.
  • In a pan, add oil, Onion, curry leaves, green chillies and saute well.
  • Add the minced prawns along with above mentioned powders and add the salt. If needed sprinkle some water (Optional).
  • When they are cooked, switch off the stove and allow it to cool. 
  • Meanwhile, in a small bowl add the cornflour and 1/2 cup water little by little and make a batter.
  • Add the smashed potato and mix thoroughly in the prawn mixture.
  • Make them into small sized round shaped (lemon size) balls and press in your palm.
  • Flatten a little bit.
  • Now dip the balls in the cornflour batter and again roll it over the bread crumps.
  • In another pan, heat the oil in medium flame.
  • Now put the prawn cutlets in the oil and fry till they becomes brown in colour. (Do not overfry it)
  • Filter the oil in kitchen towel.
  • Hot prawn cutlets are ready to be served with tomato sauce. 



Note:
1. Instead of corn flour, egg white can be used for dipping the cutlets.

Home made - Breadcrumbs | How to make home made breadcrumbs


Ingredients

  • Bread Slices - 4


Method

  • Preheat the oven to 150 degree celcius.
  • Place the bread slices and toast it for 2 to 3 min or until they become dark brown in color.
  • Do not over fry it.
  • Now make into small slices and grind in the mixer to a coarse powder.
  • Store it in a air tight container for future use.

Garlic Rolls


Ingredients
For Rolls

  • All Purpose Flour - 2 cups
  • Instant Dry Yeast - 1 Sachet (11 gms)
  • Milk - 1/2 cup (Lukewarm)
  • Butter - 1 tsp
  • Oil -  1 to 2 tsp
  • Sugar - 3 tsp
  • Salt - 1 tsp
  • Water - 1/2 cup (Lukewarm)

For Garlic Spread

  • Garlic - 4 to 5 cloves (Chopped very finely)
  • Coriander Leaves - few
  • Salted Butter - 2 to 3 tsp (Room temperature)



Method
For Garlic Spread

  • Mix all the ingredients.
  • Can be saved in fridge for 3 to 4 days and used again later.


For Rolls

  • In large pan, add the all purpose flour, mix the yeast, sugar and salt well.
  • Now add the butter and add the Milk, little by little and if needed, add the water little by little to make smooth soft dough.
  • Add oil, and knead the dough nicely until, it becomes soft.
  • Cover the dough with a wet cloth and leave it for 1 to 2 hrs or until it doubles in its size.
  • Now beat down the dough so that the air in dough goes off.
  • Divide the dough in to four equal parts and spread it with the garlic spread.
  • Now roll the dough and leave it for another 30 min in the baking pan.
  • Pre-heat the oven to 180 degree celcius.
  • Place the rolls in the oven and bake it for 20 to 25 min until, the aroma of garlic spread can be smelt.
  • Hot and Soft Garlic rolls are ready to be served.

Eggless Banana Walnut Bread

I mostly prefer eggless baking. If i dont have choice or dont have egg replacing ingredients at home, then only i go for adding eggs. So while searching for this recipe, i found the below recipe from cook with love by Medhaa and it sounds good to give a try. So i too tried out and came really very well. The only change i did was reduced the baking soda to half and added baking powder.

Ingredients

  • All Purpose Flour / Maida - 1.5 cups
  • Ripe Bananas - 3
  • Walnuts - 1 cup
  • Sugar - 1 cup
  • Butter - 4 tsp (room temperature)
  • Curd/Yogurt - 2 tsp
  • Salt - 1/4 tsp
  • Baking Soda - 1/2 tsp
  • Baking Powder - 1 tsp
  • Vanilla Essence - 1 tsp
  • Milk - 1/2 cup




Method

  • Pre Heat oven to 350 degree Fahrenheit / 180 degree centigrade
  • Mash the bananas, add sugar, yogurt and mix well.
  • Now beat the butter, salt, and flour till incorporated.
  • Mix the Baking Soda and baking powder with the milk and add it to the above mixer along with the vanilla essence.
  • Mix in the walnuts and stir till everything is well blended.
  • Pour this batter in a greased bread tin and bake for about 50-60 minutes or till a tooth pick inserted comes out dry.
  • Delicious Banana Walnut Bread is ready.

Paneer Bhurji


Ingredients
  • Paneer - 1 cup (grated)
  • Onion - 1 cup (chopped finely)
  • Tomato - 1 cup (chopped finely)
  • Green Chilli - 3 (chopped nicely)
  • Ginger Garlic Paste - 1/2 tsp
  • Turmeric powder - a pinch
  • Garam masala - 1/2 to 1 tsp (can be adjusted according to taste
  • Oil - 2 tsp
  • Butter - 1 tsp
  • Kasoori Methi / Dry fenugreek leaves - 2 tsp
  • Salt - as per taste
  • Milk - 1/2 cup
  • Cashewnut - 10 to 12 (grinded to paste) (optional)
  • Coriander Leaves - for garnishing


Method
  • In a pan, add oil and when hot add chopped onions.
  • Saute onions on medium flame. 
  • After onions turn light brown, add the chopped tomatoes and saute well, till they become soft.
  • Add the green chillies, ginger garlic paste, salt, turmeric powder, garam masala powder,and grated paneer. 
  • Now add Cashewnut paste and kasoori methi, a dash of butter,and 1/2 cup of boiled milk.
  • Mix well and let it cook on medium flame  stirring continuously.
  • Cook till oil separates out from mixture.
  • Garnish with coriander leaves and serve hot with rotis, naan etc.
