How to make Coconut Sevai | Thengai Sevai | Coconut Rice Noodles | Breakfast recipes


Coconut Sevai or Thengai Sevai, is one of the light Breakfast or tiffen items, we used to have it fortnightly. It is easy to prepare yet tasty. We can do many variations in the sevai like, lemon sevai, tamarind sevai, coconut sevai. Now we see how to prepare coconut sevai.

How to make coconut sevai / Thengai Sevai

Preparation time: 20 min | Cook Time: 10 min | Serves: 4
Recipe Category: Breakfast | Recipe Cuisine: South Indian

Ingredients
  • Sevai/Dried Rice noodles - 2 cups
  • Boiling water - 2 cups
  • Salt - a pinch
  • Coconut oil - 1 tsp
  • Sunflower oil - 1 tsp
  • Mustard seeds - a pinch
  • Urud dal - 1/4 tsp
  • Bengal gram - 1/2 tsp
  • Curry leaves - 10 to 15
  • Dried chillies - 3
  • Asafoetida - 1/6 tsp
  • Salt - as per taste
  • Grated coconut - 1/2  cup
  • Cashews - few
  • Ghee - 1 tsp
  • Coriander leaves for garnishing

Method:

1. Take 2 cups of sevai and salt and add boiling water, until it is covered.

2. Keep it closed for 5 min. Do not keep for more, as the rice noodles becomes mushy. Filter the sevai and spread it in a plate, and allow to dry.

3. In a wok or kadai, add coconut oil and when it is hot, add the mustard seeds, urud dal, bengal gram and fry till the bengal gram becomes golden brown colour.

4. Add the curry leaves, dried chillies, salt and asafoetida and fry for few minutes.

5. Fry the coconut for few minutes. Take care not to over fry it.
6. Add in the Sevai or rice noodles.

7. Mix the sevai thoroughly, till the ingredients are well mixed.
8. In a separate kadai or pan, add 1 tsp ghee and fry the cashews till golden brown.

9. Mix it to the sevai and give a stir.


10. Delicious and yummy coconut sevai is ready to be served.




Note:
1. I used frozen grated coconut. You can use fresh coconut.
2. You can add peanuts/groundnuts while frying the curry leaves.
3. My mom used to fry the cashews in ghee and add it separately in the final stage. One of my friend, used to add cashews too while adding curry leaves stage itself.
4. You can use replace coconut oil with normal cooking oil too. But I feel, the flavor gets reduced in my opinion.
5. Red chillies can be replaced by green chillies. But keep in mind of the spiciness.

I eat papaya in my childhood days, as my mom compels me to eat. I literally don't like it at all. But later on, knowing its health benefits, started liking it. If you also eat papaya on compulsion, you must surely know its benefits. Its not just 1 or 2 benefits.. It has 7 benefits when you eat this fruit or juice...

1. Papaya Contains Antioxidants which fights against cancer causing cells.
2. Papaya is Used to Treat Digestive Disorders
3. Papaya Prevents Premature Aging
4. Papaya is to boost male virility
5. Papaya is Used as a Cleanser

Now to the recipe...

Ingredients:
1. Ripe Papaya - 1/2
2. Sugar / Honey - 3 tsp (increase or decrease based on papaya sweetness).
3. Ice cubes (optional)

Method.

1. Remove the skin of the papaya.

2. Cut into cubes.

3. In the food processor, add in the papaya cubes, honey and grind till it becomes juicy.
4. Add in the ice cubes and give a stir till ice cubes gets crushed. (If you do not want ice cubes, you can stop at the previous step itself).
5. Serve it chilled.

Pudalangai Poriyal | Snake gourd Stir fry | How to make Pudalangai Poriyal | Pudalangai Recipes | Poriyal Recipes | Side dishes for Rice

Pudalangai / Snakegourd is one of easy to cook vegetable. Today I prepared the Pudalangai Poriyal / Snake gourd Stir Fry. I love this vegetable because of its simplicity and its health benefits. I paired it with sambar sadham and it really goes well with it. Now to the recipe...

How to make Pudalangai Poriyal

Preparation time: 10 min | Cook Time: 15 min | Serves: 4

Ingredients
  • Pudalangai / Snake gourd - 1
  • Channa dal / Bengal gram - 3 tsp
  • Mustard seeds - a pinch
  • Urud dal - 1 tsp
  • Dry red chillies - 4
  • Onion - 1 medium chopped finely
  • Coconut - 1/4 cup (grated)
  • Curry leaves - few
  • Oil - 2 tsp
  • Salt - as per taste


Method

1. Wash the snakegourd and scrape the outer skin with the knife.
2. Cut lengthwise and remove the seeds. Then cut the snakegourd into small pieces as shown.

3. In a small pan, wash and pressure cook the channa dal / bengal gram with little turmeric for 1 or 2 whistle. Do not overcook it, as it may turn mushy. It should look as shown in the below picture (cooked dal)


4. In a kadai / wok, add the oil, and when it is hot, add the mustard seeds, urud dal, curry leaves, red chillies and onion one by one as mentioned.
5. Cook till onion are half cooked.
6. Add in the snake gourd and channa dal and mix well.



7. You can sprinkle some water while cooking to for the snake gourd to get cooked. Take care not to add more.
8. When they are done, add in the grated/shredded coconut and mix well.
9. Cook for another 2 to 3 min and switch off the stove.


10. Serve it as a side dish for rasam sadam or sambar sadam as I do.

SHARJAH SHAKE

INGREDIENTS

1)  Frozen milk - 1/2  litre (better if you buy 1/2 litre cover milk and freeze it...It will be easy for to smash into small chunks it before you grind it in a blender)
2)  Banana (small) - 2
3)  Nutella  -  2 tablespoon
4)  Cashew nuts  - 10
5)  Peanut - 10
6)  Sugar - 4 tbsp (If needed, add more)
7)  Dates - 1 (chopped after removing seed)
8)  Cadbuary dairy milk - A small piece (Optional, I added..I am really crazy about chocolates)
9)  Cardamom powder - a small pinch
10) Boost/Horlicks - A pinch (optional as Nutella is the best choice)
11) Peanut candy/chikki - a small piece (chopped) - optional. I added

Garnish

Garnish is completely your choice..I garnished this chill chill drink with

1)  Cherry - 1
2)  Cashew nut (crushed) - 3 ( You can crush and mix it with the drink...It will add more taste when we have the drink)
3)  Ice cubes (crushed) - 1

PROCEDURE

1)  Smash and Crush the frozen milk into chunks with a chapatti roller (starting from the sides of the cover containing milk)
2)  Grind the crushed frozen milk with all the ingredients numbered 2 to 11 in a blender for 1 to 2 minutes..Don't over grind it...It will loose it's thick paste texture
3)  Garnish it with cherry, crushed ice cube and chopped cashew nuts..

          Yummy healthy SHARJAH SHAKE is ready...The very important point when one makes this delicious drink is to avoid water totally while grinding....Consume as soon as u make it...As time passes, it will loose it's chillness...An easy recipe to entertain your guests...So You guys try it out
