If you are my regular reader, then you know I am great fan of prawns. I try different recipes using prawns. This Prawn Fry in Andhra style is one such recipe wich I tried recently and came out good. I tried the recipe from here. I felt bit spicy when took separately but when I had along with chicken Briyani, I felt its tastes good. Next time will reduce the the spiciness. Prawn Fry in Andhra Style

Preparation time: 30 min | Cook Time: 20 min
 Total Time: 50 min | Serves: 5

Ingredients



For Marination 

Prawns - 1/2 kg or around 30 to 35 pieces
Chilli powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Ginger garlic paste - 1 tsp
Salt - 1/2 tsp
Lemon juice - 2 tsp

For fry

Onion - 2 medium sized
Garlic - chopped finely 
Fenugreek leaves / Kasoori methi - 1.5 tsp(optional)
Chilli powder - 1 tsp 
Coriander powder - 1 tsp
Garam masala - 1/2 tsp
Salt as per taste
Oil - 3 tsp
Mustard seeds - 2 pinches
Urud dal - 1/2 tsp
Fennel seeds - 1/2 tsp
Curry leaves - few
Grated Coconut - 1/4 cup




Method


1. Wash and devein the shells of prawns. Remove the black thread like part from the prawns. Wash with salt and let it dry. Add the chilli powder, turmeric powder, salt, ginger garlic paste and lemon juice and mix thoroughly.

2. Let it marinate for 30 to 40 min. After 40 min transfer to a vessel and heat it.

3. The prawns leaves out water and allow the prawns to cook with that water. The prawns will become curly as shown. Cook till no water remains or filter out the water if prawns are cooked already.

4. Transfer the prawns to another bowl and using the same pan, add oil, and when hot add the mustard seeds, Urud dal, fennel seeds and fry. Add the garlic and Onion.

5. When the onions turns pale add the curry leaves, fry for a min. Add the prawns and mix well.

6. Add the coriander powder, chilli powder, garam masala and mix well. Sprinkle little water, if you want.

7. Add the grated coconut and mix thoroughly. Cook for another 5 min and switch off the stove.

8. Serve the yummy Andhra style prawns with rice.

Notes: 
1. Prawns while cooking leaves water. If that water is not enough for the prawns to cook, then add very little amount of water until prawns are cooked well. 
2. While adding the curry leaves, you can add the methi leaves also. It enhances the taste.

This Eggless Apple and Dates Muffins are easy to prepare and tastes really great. I had some green apples in my fridge and bored of making milkshake recipes and other regular things. So while searching net, got so many eggless apple muffins recipes. Got confused which one to follow and finally made my own recipe.  It tasted really good and everybody liked it. Since this recipe is first time, I did it very little quantity only. Next time will try for more.

Eggless Apple & Dates Muffins

Preparation time: 10 min | Cook Time: 45 min | Total Time: 55 min | Serves: 3

Ingredients

Dry ingredients

Maida / All purpose flour - 1 1/4 cups
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Cinnamon powder - 1/2 tsp
Salt - a pinch


Wet ingredients

Oil - 4 tbsp cup
Buttermilk - 1/4 cup
Butter - 2 tbsp (room temperature)
Honey/Maple syrup- 1/4 cup
Vanilla essence - 1 tsp


To Mix

Apple - 1 (chopped finely)
Dates - 5 to 6 (chopped finely)
Walnuts (chopped) - 3 tsp (optional)


Method

1. Preheat the oven to 170 C. Swift all the dry ingredients together. Mix the wet ingredients together as shown below.

2. Beat the beat ingredients until they become creamy as shown below. But do not over beat it. Now mix the dry ingredients slowly to the wet mixture.

3. Mix them properly so that no lumps are formed. Add the apple, dates and nuts now and give a little stirring. 

4. Pour 1 to 2 tbsp to each muffin cups and place in the oven for 45 min to 1 hr. Insert a tooth stick and check if it comes out clean. 

5. Serve the muffins.

Easy, Tasty and healthy Apple and Dates muffins with walnuts are ready to be eaten

Notes:
1. I used green apple, you can also use red apples also.
2. Honey can be replaced with maple syrup.
3. Apple can be grated and added, instead of chopping into pieces.
4. Do not keep on opening the oven. Open by 40 min and check if it is cooked.
5. Any nuts can make wonders.

Pepper Chicken Chettinad is a authentic recipe. I tried this recipe from here and it came out very nicely. I already posted a pepper chicken version and this is slightly different from that. Everybody in our family loved this. Lets see how to prepare this tasty pepper chicken chettinad dry version.

How to make Pepper Chicken Chettinad

Preparation time: 10 min | Cook Time: 25 min 
 Total Time: 35 min | Serves: 5

Ingredients 



Chicken - 1/2 kg
Oil - 3 tbsp
Onion - 2 chopped lengthwise 
Tomato - 1 big or 2 small
Fennel seeds -  1/2 tsp
Cumin seeds - 1/4 tsp
Cloves - 6 to 8
Cinnamon stick - 3 to 4 (2 inch length)
Cardamom - 3
Bay leaf - 3 crushed
Chili powder - 1 tsp
Coriander powder - 1.5 tsp
Cumin powder - 1 tsp
Turmeric powder - 1/4 tsp
Salt - as per taste
Ginger garlic paste - 2 tsp
Fresh black pepper powder - 1/2 tsp ( or crush the black pepper coarsely)
Water - 1 cup ( + or - )
Coriander leaves for garnishing 



Method


1. In a wok/ kadai, add oil and when it is hot add the cloves, fennel seeds, cumin seeds, cinnamon stick, cardamom, bay leaf one by one and fry for 1 min in medium heat. ( don't let them become black ).


2. Add the onion and sauté till transparent. Add the ginger garlic paste. Add the tomatoes when the raw smell of ginger garlic goes off and sauté till mushy. 

3. Add the chilli powder, coriander powder, turmeric powder, cumin powder and salt. Add the chicken pieces now and mix it well. 

4. Cover and cook the chicken. Chicken leaves the water and mostly that water would be enough for the chicken to cook. If you feel, chicken is not cooked properly, just add 1 cup of water. 

5. Cook the chicken until the oil oozes out. Add the crushed pepper powder now. Mix it well. Cook fur another 5 min and switch off. Garnish with coriander leaves. 

6. Serve the hot hot chicken with steamed rice or roti.

Broccoli Soup is one of our family favorite soup. Once a week I prepare this broccoli soup definitely. This is so simple to prepare and tastes great. The basic recipe I got from my Chinese colleague and I changed a bit according to our family taste. Let's see how to prepare the Broccoli Soup.

How to make Broccoli Soup

Preparation time: 05 min | Cook Time: 15 min | Serves: 3

Ingredients 
Broccoli - 2 cups 
Olive oil - 1 tsp
Water - 1 litre + 1/4 cup
Vegetable stock - 1/4 cup
Green chilli - 2 chopped finely
White pepper powder - 14 tsp
Milk - 4 tbsp
Corn flour - 2 tsp

Method

1. Wash the broccoli and cut into small pieces ( around 2 cups ). Mix the corn flour + 1/4 cup water and keep ready.

2. In a pan, add olive oil and stir fry the broccoli just for 3 to 4 min.

3. In another vessel, add water, vegetable stock, green chili and bring it to boil. Add the broccoli now and white pepper. 

4. Add the milk and again bring to boil. Add the corn flour water now. Allow to cook for another 5 min and switch off the stove.

6. Serve the hot hot and healthy soup.

Notes:
1. Do not fry more than the mentioned time as it may tend to loose its crunchiness. 
2. Instead of frying in olive oil, you can use butter as it enhances the taste. 
3. Adjust the green chilli according to your spice level.
4. You can add black pepper powder also.
