Almond Banana Carrot Smoothie | Summer Special Drinks

Here is another refreshing and healthy smoothie for this summer. It can be had in the breakfast and it would be very filling to handle the day.

Ingredients:
  • Almonds - 1 cup
  • Grated carrot - 1 cup
  • Banana - 1
  • Sugar - as needed
  • Full cream Milk - 3 cups
  • Water - 1 cup
  • Ice cubes - as required.

Method:

1. Take the almonds/badam and soak in hot water for 2 hrs (it is good to replace the hot water after 1 hr, with some more hot water) or soak in normal water for 5 hrs.

2. Meanwhile grate the carrot. Cut the banana just before using it else it may become black.

3. After 2 hrs, remove the skin of the almonds.
4. Transfer the almonds, carrot and banana to the food processor or mixer grinder.

5. Add in the sugar and milk and process/grind it until it becomes to a smooth paste.

6. Add the ice cubes and give a stir again.
7. Filter it to filter out the residue and serve it chilled.

Oats Banana Walnut Cake - No Egg / No Butter Version

This cake is so simply, delicious yet healthy one, as there is no butter mixed to it and adding oats adds extra healthiness to this cake. This is simple and easy cake that beginner can easily prepare. Cake got finished within 2 hrs after I removed from oven.

Ingredients

  • Banana - 8 (Small)
  • Oats - 1 and 1/2 cup ( + 2 tsp for topping - optional)
  • Maida - 1 cup
  • Vegetable Oil - 1/4 cup
  • Baking powder - 1 tsp
  • Baking soda - 1/4 tsp
  • Salt - a pinch
  • Sugar - 1/2 cup 
  • Vanilla Essence - 1/2 tsp


Method
  • Preheat the oven to 180 cel for 10 to 15 min. Meanwhile you can prepare the following.
  • Dry fry the oats and grind into fine powder. 

  •  Sift the all purpose flour, baking soda and baking powder.


  •  To this add the oats powder.


  •  In another bowl, take the bananas.


  •  Add sugar to it.


  •  Smash/beat nicely, until it becomes a batter form. to this add the oil and vanilla essence.


  •  Add the dry ingredients to this and mix thoroughly.


  •  Add the chopped nuts.


  • Pour the batter in to the baking tray.
  • Add the remaining oats on top (optional)


  •  Remove after 40 min or insert a tooth stick and check if it comes out clean or cake leaves the sides.


  •  Remove the cake from the baking tray and allow to cool before serving.


  • Cake is ready to serve.

Notes:
  • Sugar quantity can be adjusted to its need. As my banana is sweeter, the sugar quantity I mentioned above it enough for our taste buds.
  • Since my kids want the cake immediately, I made it to cool faster by placing the baking tray on a plate full of cold water. So it got cooled withing 5 min.

Banana Bonda

This recipe, I got it from Priya's blog - Priya's Versatile Recipes. In blogger world, I think, there is no need to introduce priya as, everyone of us know her blog and her fabulous recipes. She is an awesome blogger with thousands of recipes... (Unbelievable.... isn't ). When I saw her post of this recipe, that evening itself I tried and it came out very well and everyone in our family loved it. Its very simple yet very yummy... The only difference is I didn't add honey, as I felt, the banana itself too sweet.


Ingredients

  • Ripe Banana - 2
  • All purpose flour - 1 cup
  • Cardamom powder - 1/2 tsp
  • Baking powder - 1/4 tsp
  • Milk - 1/2 cup


Method

  • Add all the above said ingredients and make into a thick batter consistency.

  • Heat oil in a pan and drop a spoonful of batter to the hot oil and fry till it becomes dark brown in colour.
  • Serve hot.

Banana Walnut Muffins - Eggless



Ingredients

  • Banana - 3 (Long sized)
  • Walnut - 1/2 cup
  • All Purpose flour - 1.5 cups
  • Sugar - 1 cup
  • Vegetable oil - 1/4 cup
  • Curd - 2 tsp
  • Baking soda - 1/2 tsp
  • Baking Powder - 1 tsp
  • Vanilla Essence - 1 tsp
  • Salt - a pinch




Method

  • Preheat the oven to 180 degree celcius.
  • In a large pan, mix the all purpose flour, salt, baking soda and baking powder.



  • In another pan, add, banana and sugar and smash well.
  • Add the oil, curd and vanilla essence to this and mix well.
  • Now transfer this to the flour pan and mix together to a semi-liquid state.



  • Add the chopped walnuts and pour to the muffin cups.
  • Bake it in the oven for 20 to 25 min, until the muffins gets baked. (the outside layer becomes brown or insert a wooden tooth stick inside one muffin and when taken out, it should be non sticky).
  • Let it cook for 5 min and serve it.

Eggless Banana Walnut Bread

I mostly prefer eggless baking. If i dont have choice or dont have egg replacing ingredients at home, then only i go for adding eggs. So while searching for this recipe, i found the below recipe from cook with love by Medhaa and it sounds good to give a try. So i too tried out and came really very well. The only change i did was reduced the baking soda to half and added baking powder.

Ingredients

  • All Purpose Flour / Maida - 1.5 cups
  • Ripe Bananas - 3
  • Walnuts - 1 cup
  • Sugar - 1 cup
  • Butter - 4 tsp (room temperature)
  • Curd/Yogurt - 2 tsp
  • Salt - 1/4 tsp
  • Baking Soda - 1/2 tsp
  • Baking Powder - 1 tsp
  • Vanilla Essence - 1 tsp
  • Milk - 1/2 cup




Method

  • Pre Heat oven to 350 degree Fahrenheit / 180 degree centigrade
  • Mash the bananas, add sugar, yogurt and mix well.
  • Now beat the butter, salt, and flour till incorporated.
  • Mix the Baking Soda and baking powder with the milk and add it to the above mixer along with the vanilla essence.
  • Mix in the walnuts and stir till everything is well blended.
  • Pour this batter in a greased bread tin and bake for about 50-60 minutes or till a tooth pick inserted comes out dry.
  • Delicious Banana Walnut Bread is ready.

Banana in Chocolate Sauce

Ingredients
  • Banana - 1
  • Cocoa powder - 2 tsp
  • Condensed Milk - 4 tsp
  • Warm water - 2 tsp
  • Dry fruits (Dates, Raisins, Apricot) - few (Chopped nicely)
  • Nuts (Cashews, Almonds, Pistachios) - few(Chopped nicely)
  • Jelly - as we need (Crushed)
  • Honey - 2 to 3 tsp
Method
  • In a wide pan, add the cocoa powder, Condensed milk and warm water and cook on simmer.
  • Mix well so that no lumps found and a fine chocolate paste is formed.
  • Allow it to cool.
  • Meanwhile crush the jelly and keep it aside.
  • Now in the banana, pour the chocolate sauce, chopped dryfruits, chopped nuts, crushed jelly, honey and serve.
Note: Instead of preparing the chocolate sauce, you can melt any milk chocolate and use as chocoloate sauce.
