Coconut Rava Kheer

Ingredients
  • Rawa/Semolina/Sooji - 1 cup
  • Coconut - 1/2 cup (grated)
  • Jaggery - 1/4 kg
  • Milk - 2 cup
  • Water - 3 cup
  • Cashews - 10 to 12
  • Raisins - 10 to 15
  • Cardamom - 6 to 8 (crushed)
  • Ghee - 4 tsp
  • Saffron - few

Method
  • In Kadai, add 1 tsp ghee and fry the rawa for few minutes and keep aside.
  • In the same, add 1 tsp again and fry the grated coconut for 1 to 2 minutes.
  • In a big vessel, start boiling the water.
  • Add the rawa little by little and stir well.
  • Add the jaggery and stir till the jaggery melts.
  • Meanwhile, in a small pan, add the ghee and fry the raisins and cashews and keep aside.
  • After the jagerry melts, add the milk and check for the sweetness. (if the sweet is less, you can add some sugar or jaggery).
  • Now add the fried coconut and the fried cashews, raisins and the crushed cardamom.
  • Allow to boil for 5 minutes and decorate with saffron and serve hot.

Coconut Rice (Thengai Sadam)




Ingredients

  • Boiled Rice - 3 cups
  • Fresh Grated Coconut - 1.5 cup
  • Urud dhal/Ulutham Paruppu - 2  tsp
  • Channa dhal/Kadalai Paruppu - 2 tsp
  • Cumin Seeds - 1/2 tsp
  • Coconut oil - 3 tsp
  • Red Chilli - 3 to 4
  • Green chilli - 2 (chopped nicely)
  • Cashews - 7 to 8
  • Very finely chopped ginger - 1/4 tsp
  • Curry leaves - a handful
  • Coriander leaves - few for garnishing
  • Asafoetida - a pinch
  • Sugar - 1/2 tsp
  • Salt as per taste

Method
  • In a Kadai, add coconut oil.
  • When the oil gets heated up, add the mustard seeds, channa dhal, urud dhall, cumin seeds, curry leaves, red chillies, cashews, finely chopped ginger one by one and fry for few minutes.
  • Add the green chillies and the coconut and saute for some more minutes. (may be around 3 to 4 minutes) (take care that coconut not get burnt)
  • Now add the salt, asafotida, sugar and then the boiled rice and mix well. (Adding little sugar, enhances the taste, since we are not adding the coconut milk in this version of coconut rice)
  • Garnish with Coriander leaves and serve hot.

Pepper Tofu





Ingredients
  • Tofu - 250 gms
  • Pepper - 2 tsp ( or as per taste)
  • Onion - 2 big (Chopped nicely)
  • Tomato - 1 (small) (Optional)
  • Green chilli - 3 (Chopped nicely)
  • Salt - as per taste
  • Curry leaves - handful
  • Oil - 3 tsp
  • Fennel - 1/4 tsp
  • Cloves - 4
  • Cinnamon stick - 1 (crushed nicely)
  • Coriander leaves - for garnishing



Method
  • In a kadai, add oil, fennel seeds, cloves, cinnamon stick.
  • When the seeds starts spluttering, add the onion, green chillies, curry leaves and fry until light brown.
  • Add the tomato and saute well.
  • Now add the Tofu cubes and cook well with the oil itself.
  • Add the salt and pepper and again cook.
  • Check for the seasoning and switch off the stove.
  • Garnish with coriander leaves and serve hot.

Carrot Halwa




Ingredients
  • Carrot - 2 – grated
  • Milk - 1.5 cups
  • Condensed Milk – 05.cup
  • Sugar - as required
  • Ghee - 1/4 cup
  • Cardamom - 5 to 6 (crushed)
  • Cashewnuts – 10
  • Raisins - 10


Method
  • In a pan, add the milk and allow to boil.
  • Now add the grated carrot until it gets cooked.
  • Now add the Condensed milk.
  • Check for the sugar and add if you need more.
  • When it becomes thick, add the cardamom and mix well.
  • Meanwhile, in another pan, add the ghee and heat it.
  • Fry the raisins and cashews in the ghee.
  • Transfer the ghee content together with the fried nuts to the halwa and mix well.
  • Garnish with some more cashews, raisins and serve hot.

Non-Blogger Recipe



Ingredients
  • Left over idli/dosa batter 1 cup
  • Salt 2 tsp
  • Maida 1 tablespoon
  • Atta 1 tablespoon
  • Beetroot 2 in number
  • Oil



Method


1.Peel and cut the beetroots
and boil in pressure cooker in
 a 2 cups of water.


2. Take the water in which
 beetroot was cooked and
use the boiled beetroot for
 making curry..we need only
 the pink beetroot water.


3.Now to the idli/dosa batter
 add maida, atta, and the
 beetroot water and mix well
without lumps.


4. Now make dosa or small
pancakes with this batter..kids
 who does not like beetroot
will love this recipe as the pink
color is appealing to them.
