Instant Ragi Dosai | Ragi Recipes | Kezhvaragu Dosai | Finger Millet Recipes

Ragai dosa

As I already said in my Ragi Semiya Upma, I started preparing my Ragi recipes. So today I am here with Instant Ragi Dosa. This Dosa can be prepared in many different ways as per our taste. If you have Ragi flour in hand, this can be made in a jiffy. This one one of the easy way of preparing. My lil one also loved the taste and my hubby too said, he liked it very much.

Kezhvaragu Dosai

Instant Ragi Dosa

Preparation time: 08 min | Cook Time: 5 min | Serves: 4
Recipe Category: Main | Recipe Cuisine: South Indian

Ingredients 
Ragi flour - 1 cup
Wheat flour - 1/4 cup
Rice flour - 1/4 cup
Onion - 1 (Chopped finely)
Green chillies - 2 (Chopped finely)
Cumin seeds - 1/4 tsp
Salt as per taste 
Curry leaves - few
Coriander leaves - few
Water - 2 cups ( + or - ) 

Method 
1. Mix the Ragi flour, rice flour, wheat flour and add the green chillies, curry leaves, onion, cumin seeds, salt and coriander leaves. Add water and mix it without any lumps and prepare as a dosa batter consistency.

2. In the Dosa pan, add a tsp of oil and add one spatula of batter and make a dosa form. When it got cooked, flip to the other side and cook.

3. Serve it with any spicy chutney or Tomato Thokku.

Notes:
1. You can add crushed fresh black pepper as per your spice level. I didnt add, as I need to give for my kids.
2. If you have left over batter of idli or dosa, you can add 1 laddle full of that.
3. If you add more rice flour, your dosa will become crispy. For Soft dosa's replace rice flour with wheat flour itself.
4. My father said, we can add few drumstick leaves instead of curry leaves.

How to make podi oothappam

Podi Oothappam / Podi uthappam is one of the simple variety of oothappam which we can for a change. This oothappam I first had in vasantha bhavan in Tambaram and liked it. After that I completely forgot that. Two weeks back, when I checked my Idli milagai podi, I found its crispiness has gone and when I was thinking what to do with the old podi, got the idea of making the podi oothappam and it turned out pretty good. So here is the very simple recipe of Podi Oothappam.

Podi Uttapam

How to make Podi Oothappam

Preparation time: 5 min | Cook Time: 4min | Serves: 1
Recipe Category: Main dish | Recipe Cuisine: South Indian

Ingredients
1. Dosa batter - as required
2. Idli milagai Podi / Gun powder - as required
3. Oil - 1 to 2 tsp / oothappam

Method
1. Heat the dosa pan / dosai kal in medium flame.
2. Add 1/2 tsp oil and spread on pan. (You can skip this part, if you use non stick pan).
3. Now add 2 or 2 and 1/2 laddle full of the dosa batter on the tawa. 
4. Sprinkle the Idli Milagai Podi generously on top. Add or sprikle a 1/2 tsp oil on the podi. 
5. Close the oothappam using some lid. ( I used aappa kadai cover). Cook in medium flame for a 1 to 2 min.


6. Open the lid and check whether the oothappam is cooked. If not cooked, let it cook for another min. 

7 . Serve it hot with your favorite sambar or chutney. You also have this as it is, as it already contains the idli milagai powder.

Notes:

1. The Batter should be not be too thick or watery. Then oothappam would not come out nicely. Batter consistency plays an important role.
2. Do not flip the oothappam, as you do for the dosa or other oothappam, as the podi gets burnt sometimes and would not be nice. 
3. Covering the oothappam and cooking is my MIL's method. You can try without covering with lid also.

Oats Rawa Dosai | Rawa Dosai Recipe | Dosai Recipes | Breakfast Recipes | Oats Recipes


Oats Rawa Dosai is an easy breakfast recipe which can be made in a jiffy. Since we add oats, it is healthy too. It is same as the rawa dosa, but with the addition of the healthy oats. You can check the Rawa Dosa Recipe here. It can be make very easily, if the ingredients are in  hand. So lets see how to prepare it.

How to make Oats Rawa Dosai Recipe

Ingredients
  • Rawa - 1 cup
  • Oats - 1/2 cup
  • All Purpose flour/Maida - 1/2 cup
  • Rice flour - 1/2 cup
  • Corn flour - 2 tsp
  • Pepper corns - 2 tsp
  • Green chillies - 2 (chopped nicely)
  • Cumin Seeds - 2 tsp
  • Salt - as needed
  • Water - 3 to 4 cups (or as needed)
  • Oil - 1/4 tsp per Dosa
  • Curry leaves - a handful
Method
  • Mix all the ingredients except oil.
  • Make in a watery content.
  • Heat the Dosa Pan and sprinkle the rawa dosa batter.
  • After that, pour the oil around the dosa and on the dosa.
  • Cook till the dosa becomes crispy.
  • No need to turn the dosa to cook on the other side.
  • Serve hot with peanut chutney.

Paruppu Adai


Ingredients
  • Urud dhall - 1/2 cup
  • Toor dhall - 1/2 cup
  • Channa dhall - 1/2 cup
  • Rice - 1 cup
  • Onion - 4 (chopped finely)
  • Green Chillies - 6 (chopped finely)
  • Turmeric powder - 1/4 tsp
  • Asafoetida -2 pinch
  • Curry leaves - handful
  • Coriander leaves - handful
  • Salt - as per taste
  • Oil - as needed

Method
  • Soak the dhalls and rice for 4 hours.
  • Grind them coarsely in the grinder.
  • In a kadai, add 1 tsp oil and then add the urud dhall, toor dhall, channa dhall 1 tsp each and turmeric powder, asafoetida and fry well.
  • Add the onion, curry leaves to this and fry for few minutes.
  • Now transfer this content, salt and coriander leaves to the Coarsely grinded batter and mix well.
  • Heat the dosa pan/ non stick pan and pour this batter with the ladle and spread like dosa.
  • Pour 1 tsp oil around the dosa.
  • Cook on both sides.
  • Serve hot with butter or Jaggery.

colourful dosa




Ingredients
  • Dosa/idli Batter - 4 cups
  • Carrot - 1/2 cup (grated)
  • Tomato - 1/2 cup (chopped finely)
  • Onion - 1/2 cup (chopped finely)
  • Green Chillies - 4 (chopped finely)
  • Salt - as needed
  • Curry leaves - few
  • Coriander leaves - few
  • Oil - as needed
Method
  • In the dosa batter, add the salt and mix well. ( if it is not added before ).
  • In the dosa pan, Pour the batter and make it a round shaped.
  • Sprinkle the mentioned vegetables on the dosa.
  • Pour 1 tsp oil around dosa and close the dosa with lid and allow to cook.
  • Take care it is not burnt in the bottom side.
  • Serve hot with any chatney or sambar. I served with tomato chutney.

Rawa Dosai

Ingredients
  • 1 cup rawai
  • 1 cup rice flour
  • ½ cup maida
  • 1 tsp curd
  • Salt as per taste
  • pepper corns
  • Asafetida
  • Cumin seeds
  • Green chilli – 3 (cut in width wise)
  • Curry leaves – few
  • Oil for sprinkling on dosai – little
  • Water – 3 cups

 Method 
  • Mix all the ingredients except oil and make rawa dosai batter in a watery form. ( batter should not be thick). 
  • In non stick dosai pan, sprinkle the batter with hand. 
  • Similarly, sprinkle the oil on the upper part of the dosai slightly. 
  • If you want you can turn it to the other side, but usually not necessary. 
  • Serve hot with any chutney.
