Apple and dates milkshake is a perfect and healthy milkshake to start the day. It is a power packed milkshake with natural sweetness of dates blended with apples and calcium. You can add a scoop of ice cream to make it more creamy.

Apple milkshake

How to make Apple and Dates Milkshake

Ingredients
Apples - 2
Dates - 10 to 12
Low fat milk - 3.5 cups (chilled milk)+ 1/2 cup hot milk.
Dates milkshake

Method

Wash and deseed the dates.

Soak the dates in 1/2 cup hot milk for 10 to 15 min.

Cut the apples just before blending. Apples may discolour very quickly.


Blend all the ingredients, pour into glasses and serve.

Chicken Kuzhambu step by step | Simple chicken kulambu for beginners | Kozhi Kuzhambu | South Indian chicken kuzhambu



Chicken Kuzhambu

Chicken Kuzhambu / Kozhi Kuzhambu is our family favorite on sundays and I do not know, why I have missed posting this. Last week I prepared and clicked both video and photos. Actually there are many varieties of kozhi kulambu in whole Tamil Nadu and this is simple chicken kulambu for beginners as it is very easy to make and tastes great, which I learnt from my mother. We will see the different varieties one by one in future posts.

chicken kuzhambu

How to make Simple Chicken Kuzhambu

Preparation time: 15 min | Cook Time: 25 min | Serves: 5
Recipe Category: Main Dish | Recipe Cuisine: South Indian


Ingredients
1. Chicken - 250 gms
2. Oil - 1 tsp
3. Onion - 1 big (chopped finely)
4. Tomato - 1 big (chopped finely)
5. Ginger and garlic paste - 2 tbsp
6. Green chillies - 3
7. Chilli powder - 2 tsp
8. Coriander powder - 2 tsp
9. Turmeric powder - 1/2 tsp
10. Salt - as per taste
11. Cardamom - 1
12. Cinnamom stick - 1
13. Cloves - 4 to 5
14. Bay leaf - 1
15. Fennel seeds - 1 tbsp + 1/4 tsp
16. Cumin  seeds - 1/2 tsp
17. Poppy seeds - 1/2 tsp
18. Grated coconut - 5 tbsp
19. Coriander leaves - few for garnishing
20. Curry leaves - few

Method

Marination
1. Marinate the chicken with 1 tsp chilli powder, 1 tsp coriander powder, 1/4 tsp turmeric and 1/2 tsp salt for 1 hr atleast.

Cooking
1. Heat a kadai and add 1 tbsp oil. 

2. When the oil is hot add the spices – fennel seeds, cardamom, cloves, cinnamon stick and biryani leaf. 
3. Fry for 2 min.
4. Now add the green chilli, and onions and cook, till the onions becomes soft.
5. When the onions becomes soft, add the ginger garlic paste.
6. Saute them well, till the raw smell of ginger garlic goes off. Add the curry leaves. 

7. Add the tomatoes and saute them well till they are mushy.
8. Saute the tomatoes till they become mushy.
9. Now add the marinated chicken pieces.
10. Add the salt, chilli powder, coriander powder and turmeric powder. Mix it well.
11. The chicken by itself leaves water. If that water is not enough, add some more water and bring to boil.
12. Close with a plate or lid. When the chicken is cooking, we prepare the coconut paste.
13. Add grated coconut, fennel seeds, cumin seeds, green chillies and poppy seeds and grind to a smooth paste adding water little by little. Keep it aside. 
14. After 10 min, check whether the chicken is cooked or not.
15. Once the chicken is cooked, add the ground paste.
16. Allow to boil for another 7 to 8 min. 
17. Add the coriander leaves. 
 18. Boil for another 2 min and switch off the stove.

19. Serve it with hot steamed white rice.

How to make podi oothappam

Podi Oothappam / Podi uthappam is one of the simple variety of oothappam which we can for a change. This oothappam I first had in vasantha bhavan in Tambaram and liked it. After that I completely forgot that. Two weeks back, when I checked my Idli milagai podi, I found its crispiness has gone and when I was thinking what to do with the old podi, got the idea of making the podi oothappam and it turned out pretty good. So here is the very simple recipe of Podi Oothappam.

Podi Uttapam

How to make Podi Oothappam

Preparation time: 5 min | Cook Time: 4min | Serves: 1
Recipe Category: Main dish | Recipe Cuisine: South Indian

Ingredients
1. Dosa batter - as required
2. Idli milagai Podi / Gun powder - as required
3. Oil - 1 to 2 tsp / oothappam

Method
1. Heat the dosa pan / dosai kal in medium flame.
2. Add 1/2 tsp oil and spread on pan. (You can skip this part, if you use non stick pan).
3. Now add 2 or 2 and 1/2 laddle full of the dosa batter on the tawa. 
4. Sprinkle the Idli Milagai Podi generously on top. Add or sprikle a 1/2 tsp oil on the podi. 
5. Close the oothappam using some lid. ( I used aappa kadai cover). Cook in medium flame for a 1 to 2 min.


6. Open the lid and check whether the oothappam is cooked. If not cooked, let it cook for another min. 

7 . Serve it hot with your favorite sambar or chutney. You also have this as it is, as it already contains the idli milagai powder.

Notes:

1. The Batter should be not be too thick or watery. Then oothappam would not come out nicely. Batter consistency plays an important role.
2. Do not flip the oothappam, as you do for the dosa or other oothappam, as the podi gets burnt sometimes and would not be nice. 
3. Covering the oothappam and cooking is my MIL's method. You can try without covering with lid also.

Apple Beetroot and Carrot Juice aka ABC juice is a juice which I started to like 3 months before. Yes just 3 months before only. I really don't have idea that beet root can be used in the juice. In my office canteen, they opened a new juice shop and in the juices list, they mentioned ABC juice. Wondering what it could be, enquired the shopper and she said it is Apple Beetroot and Carrot juice. I just ordered with a doubt how it might taste and to my surprise, I loved the juice in the first sip itself. From that time, I used to order this juice without sugar and ice. I really love it without sugar and ice. They have a big juice extractor to prepare this ABC juice. Since i do not have it at home, I used my regular mixer grinder to do this, by adding little water and filtering it. Though the outcome was not same like the canteen juice, still I loved it. (Soon will buy the juice extractor... he he he). If you have the juice extractor, never miss to try this juice.

Health Benefits

The health benefits of apple are, it reduces the risk of lung cancer, colon cancer and decreases the white fat, obesity, glucose intolerance and fatty liver diseases. It is good source of dietary fiber and vitamin c.

The health benefits of beetroot are, it protects again liver disease, lowers the blood pressure, increases the blood flow, good for diabetic patients. 

Health benefits of carrots, everybody knows that it is a good source of Î²-carotene, which are metabolised into vitamin A in humans, that helps to improve the poor vision. Besides that, they are rich in antioxidants, and minerals and are used to treat the digestive problems, constipation.

How to make Apple Beetroot Carrot Juice / ABC Juice

Ingredients
Apple - 2 
Beetroot - 1
Carrot - 1 (medium sized)
Water - 1/2 cup ( no need for water, if you use juice extractor)


Method
1. Wash the apple, beetroot and carrot nicely.

2. Peel off the beetroot and carrot skin. 
3. If you have juice extractor, add the beetroot, carrot and apple and extract the juice. Thats it. (tastes superb)
4. If you do not have juice extractor, grate them using the grater. Add to the mixer by adding water.  


5. Extract the juice by using a juice filter. (tastes good).

5. Serve it.

Notes:
If you like your juice to be sweet, just add 1 tsp sugar. ( But I do not recommend, as it spoils the taste)
If you are grinding using mixer, do not add more water, as it becomes more watery.
