Carrot and orange Juice

Carrot and orange makes a great combination to prepare juice. In my office canteen, they used to prepare different combination of fruits and vegetable juices. I always go either for carrot juice or ABC Juice, but one day saw them preparing this juice and thought of trying it. So I ordered this carrot and orange juice and it was really delicious. So I started preparing this at home and everybody loves this combo at my home also. So try this at home and drop your comments.

Carrot and Orange Juice

Preparation time: 5 min | Cook Time: 0 min 
Total Time: 5 min | Serves: 2

Ingredients

Oranges - 2
Carrot - 2
Sugar - as needed ( optional )
Ginger - 1 inch ( optional )
Ice cubes - as needed




Method

If you have juice extractor 

1. Add carrots and oranges in the juice extractor.

2. Serve the juice with ice cubes.


If you have blender 
  1. Cut the carrots, ginger and oranges and blend them together with 1 cup of water. 
  2. Filter them with the strainer. 
  3. Add sugar and mix it.
  4. Serve it with ice cubes. 


Tasty and healthy Juice is ready to have for this summer.

Notes: 
1. You can add a small piece of ginger if your like.
2. I feel adding sugar reduces the original taste. But if you like you can add it.

Veg cheese balls or vegetable cheese balls or veggi cheese balls is such a tempting snack that kids would love to have it. When I tried these and gave to my kids they finished it fast and asked some more and again I did another batch for myself and my hubby. These can be done for any parties or for guests and I assure you, you will get praised for these. I got the idea from here but changed to my taste. Need to try the original version also. How to make Veggie Cheese Balls

Preparation time: 15 min | Cook Time: 10 min 
Total Time: 25| Serves: 6

Ingredients


Mixed vegetables - 1.5 cups
Potato - 3 small (around 75 to100 gms)
Paneer - 1/2 cup or 100gms

Cheese - 6 tbsp ( increase or decrease as your wish ) (you can use mozerella or cheddar cheese)
Corn flour - 2.5 tbsp
All purpose flour - 1/4 cup ( + or - )
Green chillies - 2
Coriander leaves - 4 tbsp (chopped)
Milk - 1/4 cup
Baking soda - 1/4 tsp
Breadcrumbs - as required
Salt - as per taste

Method


1. Cook the mixed veggies with little salt until soft. Boil the potatoes and peel off its skin. 


2. If you are adding frozen paneer, Soak it in hot water for 3 min, squeeze slightly and then add it. If you are using fresh paneer just add as it is. Add the cheese. Mozzarella cheese does good work.

3. Chop the green chillies and coriander leaves finely and add it.

4. Add the required salt, all purpose flour, baking soda and mix well by crushing the vegetables and other ingredients as far as you can. Make a dough has shown below.

5. Make small equal balls and dip the balls in the milk. Immediately roll the balls in the breadcrumbs.

6.  Again slightly dip the balls in the milk and roll the balls in the bread crumps mixture again until the bread crumps are coated well. Do the same for all the balls. Let it rest for 10 to 15 min in fridge. Now Heat the oil in medium and drop the balls slowly.

7. When the balls turns golden colour or light brown colour, remove it and filter the oil. Do this process in small batches.

8. Yummy and addictive veg cheese balls are ready. Serve with tomato sauce or chilli sauce.

How to make Vendhaya Kuzhambu | Fenugreek seeds gravy | Methi seeds curry | Easy South Indian Kuzhambu recipes





Vendhaya Kara kuzhambu

Vendhaya Kuzhambu / Venthaya Kulambu is a tempting Kuzhambu with lot of health benefits. This is very good for diabetic people and it has lot of fibre in it. This a tasty, delicious, healthy, tangy and spicy kuzhambu, which I loved a lot from my childhood. This kuzhambu can be prepared in different ways. People used to grind the shallots along with fenugreek seeds. But this is my simplest way and it tastes very great. Lets see how to make this tasty Vendhaya Kuzhambu.

How to make Vendhaya Kuzhambu

Preparation time: 10 min | Cook Time: 20 min 
 Total Time: 30 min | Serves: 5

Ingredients

Oil - 2 tbsp
Mustard seeds - 2 pinch
Urud dal - 1/4 tsp
Fenugreek seeds/Vendhayam - 2 tsp
Cumin seeds - 1/5 tsp
Asafoetida - a pinch
Tomato - 2 (medium)
Onion - 1 cup (13 to 15) shallots
Garlic - 8 cloves (I used big sized)
Chilli powder - 1.5 tsp
Coriander powder - 2 tsp
Turmeric powder - 1/4 tsp
Tamarind - 1 Gooseberry size
Water - 1 cup hot water + 3 cups normal water
Curry leaves - few
Coriander leaves - few
Salt - as per taste

Method



1. Dry fry the fenugreek seeds, until they become brown as shown below. 

2. Grind it to a coarse powder. 

3. Soak the tamarind in hot water for 10 to 15 min. In a wok / kadai add the oil and when it is hot add the mustard seeds . When it splutters add the Urud dal, cumin. 

4. Add in the onion, garlic and sauté the onions. Add in the tomato, curry leaves, coriander leaves and salt. Sauté them, until tomato becomes mushy. 

5. Add the chilli powder, coriander powder, turmeric, asafoetida. Sauté for 3 min. or until oil oozes out from the sides. Add the tamarind pulp and water.

6. Add the crushed fenugreek seeds and allow to boil for 10 min at least. 

7. Garnish with Cilantro and serve hot with white rice. 


Notes:
1. Adding shallots increases the taste. Normal onions can also be used. 
2. You can also add 1/4 cup coconut milk. It enhances the taste. 
3. My grandma used to add little jaggery. 
4. If coconut milk is not added, you can keep it for 5 days in fridge and 2 days if kept outside.

Healthy and tasty Vendhaya Kuzhambu is ready to be served with hot steamed rice.

How to make Mango Muffins

I prepared this Mango muffins along with the Mango and Oats Smoothie which I posted earlier. There I mentioned I need to finish my mango pulp as it's expiry date is nearing.. So I tired this Mango Muffins with that pulp and this is the first time I added eggs in baking. It came really soft and tasted great.

Easy Mango Muffins for Breakfast

Preparation time: 15 min | Cook Time: 20 min 
Total Time: 35 min | Serves: 4

Ingredients

All purpose flour - 1 cup headed
Baking soda - 3/4 tsp
Baking powder - 1 tsp
Ground Cinnamon - 1/2 tsp
Salt - 1/5 tsp
Vegetable Oil - 1/4 cup
Egg - 1
Honey - 1/2 cup + 3 tbsp 
Mango pulp - 1/2 cup
Vanilla essence - 1 tsp



Method 
1. Add all the wet ingredients together and beat them until smooth as shown. 

2. Mix the dry ingredients and sift them twice at least so that the baking powder and baking soda gets well mixed. Add this little by little to the wet ingredients. 

3. Best both of them until they are about to form spikes. Add the nuts and dates and just give a little stir. 

4. Transfer the content to the muffin cups and bake them for 15 to 20 min or insert a stick in the muffins and check they come out clean. 

5. Serve the hot muffins.

Notes:
1. If you want to check whether muffins are ready, check after 15 min. 
2. You can replace the cashews with walnuts and dates with raisins. 
3. Fresh mango pulp and little mango pieces can also be added, which enhances the taste.
