Eggless Strawberry Muffins | How to make Eggless strawberry muffins | Eggless baking

Eggless Strawberry Muffins: I have not baked anything for quite a long time and lo asking to bake strawberry muffins or cake. So while checking the book marks found this Eggless Strawberry Muffins. In my first attempt itself, it came out really very very good. Even I didn't expect that it would turn out so good. I took the basic recipe from Priya aks and did a slight modification and also reduced all the quantity to half. Original recipe has milk and I replaced with strawberry puree.

Eggless Strawberry Muffins

Preparation time: 15 min | Cook Time: 35 min | Serves: 4

Ingredients 
All purpose flour - 1 cup
Sugar - 1/2 cup
Baking powder - 1/2 tsp
Baking soda - 1/4 tsp
Yogurt - 1/2 cup
Oil - 1/4 cup
Strawberry puree  - 1/4 cup
Vanilla extract - 1/2 tsp
Chopped strawberries - few


Methods 
1.Preheat the oven for 180 C. 

2. Sift the flour, baking powder, baking soda and salt together nicely.

3. Cut the strawberries and blend them to purée.

 4. Add sugar and again blend it. 

5. Now in a bowl, add the curd. 

6. Add the purée.

7. Add the oil and vanilla essence.

8. Mix them nicely. 

9. Now add the flour little by little and mix it without any lumps. (See notes 1)

10. Let if rest for 5 min.

11. Meanwhile chop the strawberries and keep it ready.

12. Now add the strawberries to the batter and mix gently.

13. Pour half the muffin cups and top it with remaining strawberries.

14. Bake it for 20 to 35 min or until tooth prick inserted comes out clean. 

15. Tasty, soft and spongy muffins are ready.

Notes;
1. I used little quantity of flour and mixed by hand fastly. If you are preparing in large quantity then use the blender in low speed, but do not over mix.
2. Original recipe, uses milk instead of puree. You can also try it.

How to make Mango Muffins

I prepared this Mango muffins along with the Mango and Oats Smoothie which I posted earlier. There I mentioned I need to finish my mango pulp as it's expiry date is nearing.. So I tired this Mango Muffins with that pulp and this is the first time I added eggs in baking. It came really soft and tasted great.

Easy Mango Muffins for Breakfast

Preparation time: 15 min | Cook Time: 20 min 
Total Time: 35 min | Serves: 4

Ingredients

All purpose flour - 1 cup headed
Baking soda - 3/4 tsp
Baking powder - 1 tsp
Ground Cinnamon - 1/2 tsp
Salt - 1/5 tsp
Vegetable Oil - 1/4 cup
Egg - 1
Honey - 1/2 cup + 3 tbsp 
Mango pulp - 1/2 cup
Vanilla essence - 1 tsp



Method 
1. Add all the wet ingredients together and beat them until smooth as shown. 

2. Mix the dry ingredients and sift them twice at least so that the baking powder and baking soda gets well mixed. Add this little by little to the wet ingredients. 

3. Best both of them until they are about to form spikes. Add the nuts and dates and just give a little stir. 

4. Transfer the content to the muffin cups and bake them for 15 to 20 min or insert a stick in the muffins and check they come out clean. 

5. Serve the hot muffins.

Notes:
1. If you want to check whether muffins are ready, check after 15 min. 
2. You can replace the cashews with walnuts and dates with raisins. 
3. Fresh mango pulp and little mango pieces can also be added, which enhances the taste.

Oats Banana Walnut Cake - No Egg / No Butter Version

This cake is so simply, delicious yet healthy one, as there is no butter mixed to it and adding oats adds extra healthiness to this cake. This is simple and easy cake that beginner can easily prepare. Cake got finished within 2 hrs after I removed from oven.

Ingredients

  • Banana - 8 (Small)
  • Oats - 1 and 1/2 cup ( + 2 tsp for topping - optional)
  • Maida - 1 cup
  • Vegetable Oil - 1/4 cup
  • Baking powder - 1 tsp
  • Baking soda - 1/4 tsp
  • Salt - a pinch
  • Sugar - 1/2 cup 
  • Vanilla Essence - 1/2 tsp


Method
  • Preheat the oven to 180 cel for 10 to 15 min. Meanwhile you can prepare the following.
  • Dry fry the oats and grind into fine powder. 

  •  Sift the all purpose flour, baking soda and baking powder.


  •  To this add the oats powder.


  •  In another bowl, take the bananas.


  •  Add sugar to it.


  •  Smash/beat nicely, until it becomes a batter form. to this add the oil and vanilla essence.


  •  Add the dry ingredients to this and mix thoroughly.


  •  Add the chopped nuts.


  • Pour the batter in to the baking tray.
  • Add the remaining oats on top (optional)


  •  Remove after 40 min or insert a tooth stick and check if it comes out clean or cake leaves the sides.


  •  Remove the cake from the baking tray and allow to cool before serving.


  • Cake is ready to serve.

Notes:
  • Sugar quantity can be adjusted to its need. As my banana is sweeter, the sugar quantity I mentioned above it enough for our taste buds.
  • Since my kids want the cake immediately, I made it to cool faster by placing the baking tray on a plate full of cold water. So it got cooled withing 5 min.

Dates Cake - No Egg / No Butter Version


As always love the Eggless version of the cakes. This one is definitely a must try one. I mostly followed the same step as of Banana Walnut cake and the result was simply amazing. This version is not much sweeter, as I dont like too much sweet. Next planning to try more sweeter version, by adding more dates.


Ingredients

  • Dates - 1 packet (200gms)
  • Milk - 1/2 cup (more or less)
  • Oil - 1/2 cup
  • All purpose flour - 1.5 cups
  • Sugar - 3/4 cup (if dates are very sweet can reduce the sugar quantity)
  • Baking powder - 1/2 tsp
  • Baking soda - 1/2 tsp
  • Almonds - 2 tsp (crushed)


Method
  • Remove seeds from dates, wash and soak the Dates in hot milk for 1/2 hour.


  •  With 4 or 5 tsp milk, grind the dates to a smooth paste first.


  •  Later add the remaining milk and give a one more grind.


  •  In a big bowl, add the all purpose flour, baking soda and baking powder and sift nicely, so that all flours are mixed properly.



  •  In another bowl, transfer the dates paste from mixier grinder and add sugar and mix well.


  •  Add this sugar - dates paste to the flour mix.


  •  Mix them thoroughly, without any lumps. If thick, can add 2 tsp of milk.


  •  To this add the oil and mix gently. (do not over mix)


  • Preheat the oven with 180 deg C.
  • Dust the baking tray with oil and then with all purpose flour, so that cake does not stick to the bottom.


  •  Pour the dates-flour mix to the tray


  • ( Optional ) Add crushed almond pieces on top for decoration. ( I forgot to mix it along with the mixture. So added at the top ). 


  •  After 40 min, insert a toothstick and check it comes out clean. Take out the cake from oven and let it cool down.


  •  Cut the cake and serve. 

  • Yummy delicious cake is ready to eat


Notes:

  • Replacing almonds with walnuts would be a better option too. 
  • You can increase the quantity of sugar, if you want more sweet cake.
