Eggless Apple and Dates Muffins | Eggless Muffin Recipes | Eggless Bakes | How to make Apple and Dates Muffins - Eggless version

This Eggless Apple and Dates Muffins are easy to prepare and tastes really great. I had some green apples in my fridge and bored of making milkshake recipes and other regular things. So while searching net, got so many eggless apple muffins recipes. Got confused which one to follow and finally made my own recipe.  It tasted really good and everybody liked it. Since this recipe is first time, I did it very little quantity only. Next time will try for more.

Eggless Apple & Dates Muffins

Preparation time: 10 min | Cook Time: 45 min | Total Time: 55 min | Serves: 3

Ingredients

Dry ingredients

Maida / All purpose flour - 1 1/4 cups
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Cinnamon powder - 1/2 tsp
Salt - a pinch


Wet ingredients

Oil - 4 tbsp cup
Buttermilk - 1/4 cup
Butter - 2 tbsp (room temperature)
Honey/Maple syrup- 1/4 cup
Vanilla essence - 1 tsp


To Mix

Apple - 1 (chopped finely)
Dates - 5 to 6 (chopped finely)
Walnuts (chopped) - 3 tsp (optional)


Method

1. Preheat the oven to 170 C. Swift all the dry ingredients together. Mix the wet ingredients together as shown below.

2. Beat the beat ingredients until they become creamy as shown below. But do not over beat it. Now mix the dry ingredients slowly to the wet mixture.

3. Mix them properly so that no lumps are formed. Add the apple, dates and nuts now and give a little stirring. 

4. Pour 1 to 2 tbsp to each muffin cups and place in the oven for 45 min to 1 hr. Insert a tooth stick and check if it comes out clean. 

5. Serve the muffins.

Easy, Tasty and healthy Apple and Dates muffins with walnuts are ready to be eaten

Notes:
1. I used green apple, you can also use red apples also.
2. Honey can be replaced with maple syrup.
3. Apple can be grated and added, instead of chopping into pieces.
4. Do not keep on opening the oven. Open by 40 min and check if it is cooked.
5. Any nuts can make wonders.

Apple Beetroot and Carrot Juice aka ABC juice is a juice which I started to like 3 months before. Yes just 3 months before only. I really don't have idea that beet root can be used in the juice. In my office canteen, they opened a new juice shop and in the juices list, they mentioned ABC juice. Wondering what it could be, enquired the shopper and she said it is Apple Beetroot and Carrot juice. I just ordered with a doubt how it might taste and to my surprise, I loved the juice in the first sip itself. From that time, I used to order this juice without sugar and ice. I really love it without sugar and ice. They have a big juice extractor to prepare this ABC juice. Since i do not have it at home, I used my regular mixer grinder to do this, by adding little water and filtering it. Though the outcome was not same like the canteen juice, still I loved it. (Soon will buy the juice extractor... he he he). If you have the juice extractor, never miss to try this juice.

Health Benefits

The health benefits of apple are, it reduces the risk of lung cancer, colon cancer and decreases the white fat, obesity, glucose intolerance and fatty liver diseases. It is good source of dietary fiber and vitamin c.

The health benefits of beetroot are, it protects again liver disease, lowers the blood pressure, increases the blood flow, good for diabetic patients. 

Health benefits of carrots, everybody knows that it is a good source of Î²-carotene, which are metabolised into vitamin A in humans, that helps to improve the poor vision. Besides that, they are rich in antioxidants, and minerals and are used to treat the digestive problems, constipation.

How to make Apple Beetroot Carrot Juice / ABC Juice

Ingredients
Apple - 2 
Beetroot - 1
Carrot - 1 (medium sized)
Water - 1/2 cup ( no need for water, if you use juice extractor)


Method
1. Wash the apple, beetroot and carrot nicely.

2. Peel off the beetroot and carrot skin. 
3. If you have juice extractor, add the beetroot, carrot and apple and extract the juice. Thats it. (tastes superb)
4. If you do not have juice extractor, grate them using the grater. Add to the mixer by adding water.  


5. Extract the juice by using a juice filter. (tastes good).

5. Serve it.

Notes:
If you like your juice to be sweet, just add 1 tsp sugar. ( But I do not recommend, as it spoils the taste)
If you are grinding using mixer, do not add more water, as it becomes more watery.

Apple Halwa

Days are moving very fast and I am becoming busy day by day... As I told in my previous post, still not recovered fully from the fever n cough... coz of that, feeling very tired after coming from office... So could not prepare any new dish or post. Even this Apple halwa, I captured, couple of months before, and was in my folder along with some more pictures. So decided to post this. First time I prepared halwa with apple and to my surprise, it was really very tasty and yummy. This recipe, even can be done, by grinding the apple and using the pulp. Since I want some crunchiness, I grated and did it.

Ingredients

  • Apple - 3
  • Ghee - 4 tsp
  • Sweetened Condensed milk - 5 to 6 tsp
  • Sugar - 1/2 to 3/4 cup
  • Almonds - 1/4 cup + 10
  • Saffron - a pinch


Method

  • Wash the apple and remove its skin.
  • Grate the apple as below.



  • In a flat bottomed pan, add the grated apple and saute till all the water content evaporates.



  • Now add the condensed milk and mix well.
  • Add the sugar and mix till the sugar gets dissolved.



  • Add the ghee at this stage.
  • Meanwhile grind the 1/2 cup almonds into a powder and crush the remaining 10 almond pieces to be used later.
  • Mix it to this apple mixture.



  • Check for the correct sweetness. (sugar or condensed milk can be added accordingly)
  • Now mix the crushed almond pieces and saffron and mix well.
  • When the ghee starts leaving the sides, switch off the stove and allow to cool and serve. 


Note: 
This apple halwa can be made by grinding the apple in mixer and using the pulp. I need to try some other time. Since I like the crunchiness of the apple, I grated and prepared the halwa. If any one have done with pulp, kindly share the outcome of it.

Apple Kheer (Apple payasam)



Ingredients

  • Apple - 1(grated into small pieces)
  • Ghee - 3 tsp
  • Condensed milk - 1/2 cup
  • Milk - 3 cups
  • Sugar as required
  • Badam flakes - few
  • Cashews - few
  • Raisin - few
Method

  • Boil the Milk such that it reduces to half its quantity.
  • In a Vessel, add ghee and the grated apple and fry for few minutes.
  • Now add little amount of the reduced milk and stir continuously by adding the little sugar ( add little sugar since we are going to add the sweetened condensed milk later)
  • Add the cardomon powder.
  • Now add the condensed milk and stir.
  • Add the other part of the reduced milk and bring to boil again and switch off the stove.
  • In another pan, fry the cashews and raisin in ghee and add to the kheer.
  • Finally add the badam flakes on top and serve hot.
  • Can be served chilled also.
