Easy Mutton Masala | Spicy Lamb Masala - Step by step | Indian Mutton Recipes | Sunday Special Recipes

Lamb masala

Mutton Masala is one of my favorite in mutton recipes, and I used to order this when we go to the Anjappar Hotel. This tastes good for any Biryani or Puloa or Naan. I planned to try this but somehow got delayed and I always end up making Mutton Kuzhambu or mutton pepper fry. So last week, I decided to try this Mutton Masala and I fulfilled my long time wish. he he he... So here goes the recipe...

How to make Mutton Masala

Preparation time: 10 min | Cook Time: 40 min | Serves: 5

Ingredients

To Saute and Grind
Onion - 2 big
Tomato - 2 big

To Temper / Spices
Cumin seeds - 1/5 tsp
Cloves - 4 to 5
Bay leaf - 1 crushed
Cinnamon stick - 1 (around 2 inch - crushed)
Fennel seeds - 3/4 tsp
Star anise - 2

For Masala
Mutton - 1/2 kg
Chilli powder - 2 tsp
Coriander powder - 1 tsp
Turmeric - 1/5 tsp
Black Pepper - 1/3 tsp (freshly ground )
Oil - 5 tbsp
Curry leaves - 2 strands
Garlic - 4 to 5 cloves (chopped finely)
Ginger - 1/2 inch piece (chopped finely)
Salt - as per taste
Coriander leaves - for garnishing
Water - 3 cups ( or as per req consistency )


Method
1. Wash the mutton with salt 4 to 5 times nicely and filter the water completely and keep aside. In a wide vessel or kadai, add 1 tsp oil and add the onions. When they are translucent, add in the chopped tomatoes.

2. Saute the onion and tomato nicely and transfer them to a food processor and add 1/2 cup water.

3. Grind the onion tomato to a coarse paste and keep aside. In a pressure cooker, add 2 tbsp oil and add the mutton pieces. Saute the mutton for a while.

4. The mutton leaves out some water and at that time, add in the onion tomato paste.

5. Add 1.5 cups of water for the mutton to cook. Add salt and pressure cook the mutton for 5 whistles. When the pressure cools down, add in the chilli powder, coriander powder and turmeric powder.

6. Allow them to boil, till oil oozes out. Switch off the stove.

7. In a wide vessel or kadai, add the remaining oil and add the tempering items one by one. Add the finely chopped ginger and garlic. Fry them for a min.

8. Add the curry leaves and fry it. Transfer the mutton gravy to this.

9. Add the remaining 1 cup of water and allow them to boil. Add the freshly ground black pepper.

10. Add in the coriander leaver and when the oil oozes out again, switch off the stove.

11. Serve the yummy mutton masala.

Notes:
1. While sauting the onion and tomato, we can add green chillies also and it gives more spicy mutton masala.

Mutton Biryani | How to make Mutton Briyani step by step | Sunday Special Recipes


Muslim Mutton Briyani

Mutton Biryani or Lamb Biryani has become famous now a days in our home. I used to buy mutton in India, but after coming to Singapore, we do not get good mutton, near by our place and so stopped cooking mutton. But one of my friend suggested to buy mutton from Mustafa and tried it. It was soft and got cooked properly. So started buying from there, whenever we go for shopping. This Mutton Biryani I tried last week and it was perfect. Do try this at home and drop your comments.

Mutton Biryani Recipe

How to make Mutton Biryani

Preparation time: 20 min (+2 hrs soaking time) | Cook Time: 30 min | Serves: 5

Ingredients

To Marinate
Mutton - 1/2 kg
Curd / Yogurt - 3 tbsp
Turmeric powder - 1/4 tsp
Salt - 1/5 tsp
Biryani Masala - 1.5 tsp

To Temper
Cloves - 4
Cinnamon stick - 1
Cardomom - 1
Bay leaf - 1
Star Anise - 2

For Biryani
Basmathi rice - 3 cups
Onion - 2 (chopped lengthwise)

Tomato - 2
Ginger Garlic Paste - 1.5 tsp 
Green Chillies - 2 (slit into half - lengthwise)
Chilli powder - 1.5 tsp
Mint leaves - 1/4 cup 
Coriander leaves - 1/4 cup 
Water - 5 cups (1.5 + 3.5)
Oil - 2 tbsp
Ghee - 2 tbsp
Cashews - few (optional)
Coriander leaves for garnishing

Salt - as per taste


How to make mutton biryani

Method


1. Wash the mutton nicely with salt. This helps to remove the raw smell from the mutton. Add the salt, ginger garlic paste, turmeric powder, curd and biryani masala. (you can add garam masala also instead of biryani masala).
2. Soak the rice for 20min atleast.

3. Mix them nicely and marinate for 2 hrs for best result.
  4. In the pressure cooker or pan, add the oil and when it is hot, add the ingredients mentioned in To temper one by one and fry for a min, keeping flame in medium.
5. Add the onion and ginger garlic paste and saute, till the raw smell of ginger goes off.
 6. Add the green chillies, coriander leaves and the mint leaves. Saute them nicely.
7. Add the tomato.
 8. Saute them nicely, till tomatoes are mushy.
9. Add the marinated mutton pieces and add the salt and the chilli powder.
 10. Saute the mutton, for 3 min and then add the water (1.5 cups).
 11. Let it cook for 5 whistles. (see notes)
12. Add the remaining water and when boiling, add the soaked rice.
13. Again cook for another 10 min in low flame.

 14. Now open the lid, and slightly mix, the rice without breaking it.
15. Add the ghee and again mix it.
 16. Cover the lid and after 5 min, open and serve hot.

17. Yummy and delicious Mutton Biryani is ready to be served.


Mutton Biryani

Notes:
1. While marinating, adding biryani masala, makes the mutton more tastier. Garam masala can be added instead.
2. Do not skip the step of marinating the mutton for a more tastier biryani.
3. While cooking mutton, the no. of whistles, depends on the cooker makes. If the mutton, not cooked, close the lid and cook again until the mutton becomes tender.
4. You can add fried onions before serving.

Mutton soup | Easy South Indian Mutton Recipes | Soup Recipes | Sunday Special Recipes | Non Vegetarian Recipes | Mutton Recipes


Mutton soup is one of my childhood favorite soup in non veg next to Nandu Soup / Nandu Rasam. Once my father met with an accident and got none fracture. That time my mother used to give him the Aatukaal soup daily. During that time only I am used to the mutton soup. My mom do not add any corn flour or any starch powder to the soup to make it thicken and so the soup would be thin and I love the taste most. So let's see the preparation of the mutton soup.

Mutton Soup

Preparation time: 8 min | Cook Time: 10 min 
Total Time: 18 min | Serves: 4

Ingredients
Mutton - 1/4 kg
Onion - 1 big (chopped nicely)
Tomato - 1 (chopped nicely)
Turmeric powder - 1/4 tsp
Pepper Powder - 1/4 tsp
Garlic - 5 cloves
Coriander Powder - 1/2 tsp
Cumin seeds - 1/4 tsp
Curry leaves - few
Salt - as per taste
Water - 2 cup
Oil - 2 tsp
Spices
Cloves - 4 to 5
Fennel seeds - 1/2 tsp
Cinnamon stick - 2 to 3
Star anise - 2 to 3
Bay leaf - 1
Cardamom - 1

Method



1. Add all the oil and when hot add all the mentioned spices. 

2. Adding the mutton pieces. 

3. Add the onions. ( see notes )


4. Add the 2 pinch turmeric and salt.


5. Fry for 3 to 4 min. Add the tomatoes.

6. Add the water till mutton is fully covered. Allow to boil.

7. When it started to boil, cover with cooker lid and whistle and wait for 6 whistles or till the mutton is well cooked. 

8. Add the coriander leaves and allow to boil.

9. This water is the mutton soup. The remaining mutton, is used for preparing any mutton kuzhambu or this mutton pepper fry

10. Add the pepper powder and serve the hot soup.

Notes:
1. If you feel the soup is thick, you can add hot water to make it thin. 
2. My mom used to say, this mutton soup is good for bones. 
3. Here you can add onion and tomato before adding mutton pieces also. No harm in it, Since we are going to pressure cook all. 
4. The 6 whistles took around 14 min for me. It might vary based on the cooker and the quality of mutton. if If the mutton is not cooked, add some more water and pressure cook it again for another 7 to 8 min.

Mutton Kuzhambu | How to make Mutton Kuzhambu | Sunday Special Recipes

Mutton kulambu

Mutton Kuzhambu is one of my mom's favorite kuzhambu. She used to prepare this more often, when I am a kid. I do not buy mutton regularly in Singapore and after a long time, I prepared this, when my mom came here and updated the photos for this post. Also there are many variations in preparing this Kuzhambu and I feel this method is as simple as that  and mostly useful for the bachelors and beginners. We can see the different styles of Mutton Kuzhambu later in coming posts.

How to make Mutton Kuzhambu

Preparation time: 10 min | Cook Time: 35 min | Serves: 4

Ingredients
  • Mutton - 1/2 kg
  • Onion - 2 big
  • Tomato - 3
  • Garlic - 7 cloves (Chopped nicely)
  • Green chillies - 5
  • Chilli powder - 1.5 tsp
  • Coriander powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Ginger garlic paste - 1 tsp
  • Cloves - 8
  • Cinnamon stick - 2
  • Bay leaves - 1
  • Fennel - 1/2 tsp
  • Salt - as required
  • Oil - 3 tbsp
  • Water - 5 cups
  • Coconut milk - 1 cup (optional)
  • Curry leaves - few
  • Coriander leaves for garnishing




Method
  • In a Cooker, add, oil, garlic, cloves, cinnamon stick, fennel, onion, curry leaves.
  • When onion becomes brown colour, add the mutton pieces to it and saute well.
  • After that, add the ginger garlic paste, green chilli, Tomato, turmeric powder and salt and again saute for a while.
  • Add the water now.
  • Cook for 5 whistles. (If the mutton is not tendor, cook for some more whistles. Also no. of whistles depends on the type of cooker)
  • When the mutton is well cooked, you can take that water for Mutton Soup. But you can leave it as it is, so that our kuzhambu would be more tastier. (If you are taking the water out, then in another pan, repeat the steps from first to till you saute the tomato and add water), 
  • Transfer the contents in the kadai and add the chilli powder, coriander powder and allow the mutton to cook again.  
  • If you want to add the Coconut milk, it can be added to the mutton kuzhambu. It  makes the kuzhambu tastier and thicker.
  • Boil for another 2 min. Garnish with coriander leaves and switch off the stove. 
  • Serve hot for rice.

Notes:

1. If you want, you can saute the onions and tomatoes and grind to a paste and add the paste to the kuzhambu. This also makes the kuzhambu thicker.
2. The spice level can be varied according to your taste buds. 
3. You can soak and grind few cashews and add to this gravy for more richer taste.
