Small fish fry

Small Fish Fry Recipe - Fish fry is always our family favorite dish. Though I prepare different fish fry recipes like vanjaram fry, masala fish fry etc., I always admire the taste of small fish fry. I don't know why, but I love them a lot. In Singapore whenever I get a chance to see the small fishes, I immediately buy them. This small fish fry I tried last but before week and last week tried Village style Fish Curry with these small fishes and I don't have any words to describe it. Will see that fish curry in my coming post and today lets see the small fish fry preparation.

Small Fish Fry Recipe

Preparation time: 10 min (+ 1hr marination) | Cook Time: 30 min | Serves: 5

Ingredients 
Any small fish - 12 to 15 pieces
Chilli powder - 2 tbsp
Coriander powder - 1 tsp
Cumin powder - 1 tsp
Turmeric powder - 1/4 tsp
Ginger garlic paste - 3 tsp
Corn flour - 1 tbsp
Rice flour -1 tbsp
Lemon Juice - 1tbsp
Salt - as per taste

Method to prepare Small Fish Fry

1. Wash the fishes nicely with salt and turmeric powder nicely. Drain the water. When most of the water got drained, add half the amount of the chilli powder, coriander powder, cumin powder, salt, ginger garlic paste and turmeric and all the lemon juice and mix well. Apply this mixture inside the fishes. Leave it aside for 30 minutes.

2. Add the remaining quantity of the powder and the corn and rice flours and mix well, so that fishes are well coated. Leave it again for another 10 minutes.

3. Now in a fish frying pan, add the oil and when it is hot, slowly drop one fish at a time and start frying them on both the sides, till they become golden brown colour on all the sides. Do fry the fishes in small batches.

4. Once you finished frying the fish, fry some curry leaves in the same oil and add on to the small fish fry before serving. Serve the fish fry with the hot hot fish kuzhambu and white rice.

Notes
1. You can prepare this fish fry, with any kind of fishes.
2. Marinating the fish is important as it gives more taste to the fish fry recipe. So try to marinate atleast 30 to 40 minutes.
3. Adding corn flour and rice flour, increases the crispiness of the fish and also can reduce the spiciness, when giving to the kids. If you do not like it, you can just omit it.
4. Adding lemon juice, gives a mild tangy flavor to the fish. If you do not like it, you can very well omit that too.

Garlic Tomato Chicken Roast

Garlic Tomato Chicken Roast... Do you feel the name is different?? Yes I too thought the same, when I first saw the recipe here. Since it looks simple and I love the garlic flavor,  I thought I can give a try to the recipe and bookmarked the recipe. Finally last Sunday, I took the recipe as a base and slightly modified according to my family taste. It came out good and everyone in our family loved it. So here goes the tasty and yummy Garlic Tomato Chicken Roast Recipe.

Tomato Garlic Chicken Roast

Garlic Tomato Chicken Roast Recipe

Preparation time: 20 min (+1 hr marination) | Cook Time: 50 min | Serves: 5

Ingredients 
Chicken - 1/2 kg
Garlic cloves - 20 cloves (with or without skin)
Tomato - 2 tomatoes (pureed)
Chilli powder - 3/4 tbsp
Coriander powder - 1/2 tbsp
Garam masala powder- 1/4 tsp
Ginger paste - 1/2 tsp
Salt - as per taste
Oil - 4 tbsp
Coriander leaves - for garnishing

To temper (Optional)
Cinnamon stick - 1
Cloves - 3 to 4
Fennel seeds - 1/4 tsp
Curry leaves - 1 spring
Star anise - 1

Method to prepare Garlic Tomato Chicken

1. Crush the garlic nicely. (you can use your mortar or food processor to do so). Keep it ready. Now wash the chicken to remove the smell. (How to remove the poultry smell from chicken). Let the water drain out. Now add the mentioned powders and salt and mix well.

2. Add the ginger paste and the crushed garlic cloves. Mix them thoroughly and let it rest for 1 hr. 

3. Add 2 tbsp oil and add the tempering items and fry for a minute. Then add the chicken pieces and start cooking. Cover and cook it.

4. The chicken leaves out water and let the chicken cook by its own water. It might take around 10 to 12 minutes. Meanwhile puree the tomato and add it to the chicken. Again close and cook. Now and then mix the chicken and also check if chicken has water or else it gets burn at the bottom.

5. Now add the remaining 2 tbsp oil and cook it. No need to add water. Keep stirring the chicken. Finally add the coriander leaves and switch off the stove.


6. Serve the chicken with plain rice or as a side dish.

Notes:
1. All the tempering items are optional. I added for our family taste. The original recipe, doesn't call for the tempering items. 
2. If you feel, chicken not cooked properly, then add slight water. Do not add more.
3. After adding the oil for the second time, do not close and cook. Keep it open and cook.

Prawn fry

This Goan Prawn fry is very simple and tasty fry. This recipe was given by one of my north Indian friend. She already gave this Egg Balchoa recipe.  She also said there are many variations of Goan Prawn Fry and this is one among them. Since I am a fan of Prawns, will try to get all the recipes from her and post it here. Now lets see the simple version of this prawn fry.

Goan prawn fry

Goan Prawn Fry

Preparation time: 05 min (+30 min marination)| Cook Time: 15 min | Serves: 4
Recipe Category: Snacks | Recipe Cuisine: North Indian

Ingredients
Prawns - 250 gms
Chilli powder - 3/4 tsp
Turmeric powder - a pinch
Ginger garlic paste - 1 tsp
Vinegar - 1 tbsp
Corn flour - 3 tbsp
Salt - as per taste

Method
1. Deveins the prawns and wash them nicely with salt. Add the chilli powder, ginger garlic paste, turmeric and salt.

2. Mix them with the vinegar and marinate them for 30 min atleast.

3. Mix them with corn flour. (I forgot to take the picture).
4. Heat oil in a tawa or pan and fry the prawns in small batches.

5. Slowly flip to the other side and fry them evenly.

6. When it is ready, serve them with lemon wedges.

Prawn Coconut Curry | Coconut Shrimp Curry | Indian Prawn Recipes




Coconut prawn curry

Prawn Coconut Curry or Coconut Shrimp Curry forms a great side dish for any Indian flat breads or any Biryani varieties where you need a spicy side dish. This can be either made spicy or mild spiciness by increasing or decreasing the amount of chilli powder. In both the ways, it tastes great. Last Sunday I prepared this Prawn Coconut Curry as the side dish for the Chicken Biryani along with the Goan Prawn Fry.

Coconut Prawn Curry

Prawn Coconut Curry

Preparation time: 20 min | Cook Time: 15 min | Serves: 5

Ingredients

I. For Marination
Prawn - 500gms
Chilli powder - 1.5 tsp
Turmeric powder - 1/5 tsp
Salt - 1/5 tsp
Ginger garlic - 2 tsp
Lemon Juice - 1 tbsp

II. To Grind
Grated coconut
Green chilli - 1 
Fennel seeds - 1/5 tsp
Poppy seeds - 1/4 tsp

III. To dry fry and make powder
Cinnamon stick - 1 stick
Fennel seeds - 1/4 tsp
Bay leaf - 1 crushed
Cloves- few ( 5 to 6 )
Cardamom - 1
Cumin - 1/5 tsp 

IV. For gravy
Onion - 2 medium sized (chopped finely)
Tomato - 2 medium sized (chopped finely)
Ginger garlic paste - 2 tsp
Curry leaves - 1 spring
Chilli powder- 1.5 tsp
Coriander powder - 1 tsp
Turmeric powder - 1/5 tsp
Cumin powder- 1/4 tsp
Garam masala - 1/4 tsp (optional)
Salt - as per taste 
Oil - 2 tbsp



Method
1. Marinate the prawns with the ingredients in I. 

2. Let it rest for 30 min atleast.(1 hr is best)

3. Grind the ingredients mentioned in II and keep it ready. 

4. Dry fry the ingredients mentioned in III till nice aroma comes.( around 2 to 3 min). Switch off the stove else it becomes black).

5. Grind to a powder form and keep it ready. 

6. In a kadai/pan, add oil and when hot add the onion, curry leaves Ginger garlic paste and sauté till onion becomes soft. 

7. Add tomato and cook until soft. 

8. Add the chilli powder, coriander powder, turmeric powder, cumin powder and salt. 

9. Add the marinated prawns. Prawns leaves out water and Let them cook with that water itself.

10.  Add the freshly ground powder. 

11. Let it cook for 3 to 4 min. 

12. Add the coconut chilli paste. Mix them.

13. Add the garam masala and cook for another 3 to 4 min.

14. Garnish with coriander leaves and switch off the stove.

15. Prawn Coconut Curry is Ready.

Andhra Style Spicy Prawn Curry | Shrimp curry in Andhra Style | Prawn Recipes | Sunday Special Recipes

Andhra style prawn curry

Andhra Style Spicy Prawn Curry is a spicy and tasty prawn curry. I got this recipe from my one of my Telugu friend. She used to bring this curry as side dish for chappathi or roti. Try this spicy prawn curry in Andhra style and enjoy your Sunday dish.

Andhra Style Spicy Prawn Curry

Preparation time: 10 min ( +30 min soaking time) | Cook Time: 25 min | Serves: 4

Ingredients 
I - Marination
Prawns -  400 gms
Coriander powder - 1/2 tsp
Turmeric powder - 2 pinch
Lime juice - 1tsp
Salt - a pinch

II - Spices
Fennel seeds - 1/2 tsp
Cardamom - 1
Cloves - 6 to 7
Bay leaf - 1 crushed
Cinnamon stick - 2 inch (Crushed)

III - Gravy
Oil - 3 tbsp
Onion - 2 (medium sized - chopped finely)
Tomato - 2 (chop finely and make into puree)
Ginger paste - 1.5 tsp
Garlic paste - 1.5 tsp
Green chillies - 2 (slit lengthwise)
Chilli powder - 1 tsp
Coriander powder - 1/2 tsp
Cumin powder - 1/2 tsp
Turmeric powder - 1/5 tsp
Pepper powder - 1/4 tsp
Garam masala - 1/2 tsp
Curry leaves - 1 spring
Salt - as per taste
Coriander leaves - for garnishing


Method 

1. Clean and devein the prawns. Wash with salt.

2. Marinate the prawns with salt, chilli powder, coriander powder, turmeric and lemon juice.
3. Let it sit for 30 min atleast.

3. In a pan, add 2 tsp oil and add the marinated prawns.

4.The prawns oozes out water. Cook the prawns in its own water. Cook for 5 min or till the prawns becomes curly. Remove and keep it aside.

4. In the same pan, add oil, and when hot add the spices one by one.

5. Add the chopped onions, curry leaves, green chillies. Sauté till they become soft. Add the Ginger garlic paste. Fry till they raw smell goes off.

6. Now add the tomato purée, remaining chilli powder, coriander powder, salt, little turmeric. Add the cumin powder.

7. Sauté them nicely, till oil oozes out.

8, Add the cooked prawns. (My prawns are half cooked and leaves out water again)

9. Mix it nicely and cook again adding garam masala and pepper powder. Cook till all water goes off. 

10. Switch off the stove and served hot.

Notes:
1. Taste before adding garam masala and pepper powder, since it becomes more spicy and children cannot eat it.
