Eggless Nutella Cookies are crunchy and tasty cookies, which I used to prepare normally, when there is more or left over nutella in my home. Since the cookies, contains nutella, my kids love them so much and never say no to these cookies. They like to eat the Nutella cookies, when they are still hot. Lets see the recipe.

Eggless Nutella Cookies

Preparation time: 10 min | Cook Time: 20 min 
 Total Time: 30 min | Serves: 3 to 4

Ingredients
All purpose flour - 1 cup + 2 tbsp
Unsalted Butter - 3 tbsp (room temperature) 
Nutella - 3 tbsp
Powered sugar - 1/4 cup
Baking powder - 1/2 tsp
Salt - 2 pinch 
Vanilla Essence - 1/4 tsp



Method
1. Preheat the oven to 175 deg C. Take a bow, and add the butter, sugar and Nutella. Beat in low speed level 1 until it is well mixed and they could form spikes. 

2. Mix the flour, baking powder, baking soda, and salt and sift well. Now add these into the Nutella butter mixture.

3. Again beat them slowly and add the vanilla essence. Mix them again till it forms a pliable dough. Now take small portion of these and flatten it using your palm. Line them in baking sheet.

4. Keep in the oven for 20 to 25 min or until you can see them leaving cracks on them or till they become light brown colour. Cool them and serve.

Nutella Lassi



This is a simple cool refreshing treat for a sunny day... Very easy to make and very chocolaty with the flavor of lassi. If you are chocoholic or Nutella lover, then you should definitely try this. 

Ingredients
  • Nutella – 4 tsp
  • Yogurt / Curd – 2 cup
  • Sugar – as needed (optional)
  • Ice cubes – as needed (optional)



Method
  • In a bowl, add the yogurt, nutella and sugar. 
  • Blend all together nicely.

  • Delicious Chocolate flavored lassi is ready.

Nutella Brownies - No Egg / No Butter Recipes

Last week went very busy due to Deepavali and the day before Deepavali my kids went to India along with my mother. After that I am feeling very lonely. In day time, since I go office, I feel bit ok, but again after coming home, I start thinking about them. I didn't show any interest in cooking, eating or even sleeping. I miss them so much. I am waiting for the day of their arrival by December end. I just want to share a quote which I came across in the FB - "Without children my wallet would be full of money, house would be clean but my heart is empty". So so True... Isn't.

I did not cook any new recipes, all these days. This one is in my draft for a long time and just thought of posting this. I took the recipe from Jeyashri's Kitchen who needs no introduction. The recipe outcome was too good. Thanks dear for the wonderful recipe. I did not added the coffee powder as in the original recipe and added little baking soda. Here we go to the recipe.



Ingredients

  • Nutella - 1 cup
  • All Purpose flour - 1 cup
  • Cocoa powder - 1/4 cup
  • Baking powder - 1 tsp
  • Baking soda - 1/4 tsp
  • Oil - 1/4 cup
  • Yogurt/Curd - 1/2 cup
  • Milk - 1/2 cup
  • Vanilla Essence - 1 tsp
  • Sugar - 2 to 3 tsp (according to taste)
  • Walnuts - a handful

Method

  • Sift the all purpose flour, cocoa powder, baking powder and baking soda thoroughly.


  • Melt the Nutella in a double boiler method. (In a big pan add water and allow to boil. Place nutella in another small pan and keep it in the boiling water and let it melt).
  • In another bowl, add curd/yogurt, oil, milk and vanilla essence and mix well.


  • Add this mixture to the nutella and if you need you can add sugar at this stage.

  • Mix the nutella mixture so that sugar dissolves.
  • Add this mixture to the mixed flours.


  • Blend nicely without any lumps.
  • Add the walnuts (or any nuts of your choice).
  • Coat the baking tray with little oil and then with flour, so that it does not get stick to the bottom.

  • Bake it for 20 to 25 min or the stick inserted in the middle of the brownies, comes out clean.
  • Cut and serve the brownies.

Nutella Truffles

I was not a big fan of nutella, until I have tasted it. Now as many of our bloggers friends, I too have become fan of Nutella.. No other go na... after tasting it... This is my first experiment with nutella recipe... The first experiment being tasting it as it is.. Since I want to try easy truffle recipe, I got the recipe from our blogger friend Rakskitchen and did very little modification of coating it with nuts. Thank you dear for this yummy and easy recipe...

Ingredients

  • Nutella - 4 tsp
  • Butter - 1 tsp
  • Choco-chip cookies/Biscuits - 6
  • Cornflakes - 1/2 cup
  • Pistachios - few (crushed)
  • Cocoa powder - 1 to 2 tsp


Method

  • Add nutella and butter in a small pan.


  • Now using double boiler method, mix nutella and butter. (In a big pan add water and allow to boil and on above that, keep this nutella butter mix and mix well, until the butter and nutella combines well) (or use microwave oven, to mix it)


  • Allow to cool.


  • Meanwhile, crush the cookies (I used biscuits) and cornflakes in a mixer just for 1 second.



  • Now add the crushed biscuits-cornflakes mixture to the nutella-butter mixture.



  • Make it into round shape.


  • Dry fry pistachios for 3 to 4 min and crush them into small pieces.


  • Now roll the truffles on to the coco powder.


  • When it is partially coated, again roll the truffles on to the crushed pistachios, until they are well coated.


  • Refrigerate the truffles for 30 to 1 hr.
  • Yummy Nutella truffles are ready to eat....
