Mango Icecream

Since I have bought many mangoes, I prepared mango ice-cream and mango milkshake. We will see the easy mango ice-cream today and mango milkshake soon in the coming posts.

Ingredients

  • Ripe Mango - 2
  • Condensed Milk - 1 can
  • Milk - 1/2 litre
  • Corn starch - 1 tsp
  • Sugar - if needed


Method

  • Wash and cut the ripe mangoes.

  • Make it a mango puree by grinding it smoothly.



  • In a big pan, add the milk and condensed milk and mix well.



  • To this add the mango puree.

  • If sugar is needed, add it as required.
  • Mix the corn starch with 2 tsp water and add to the boiling mixture.
  • After adding the corn starch, the mixture starts thickening.

  • Switch off and allow to cool.

  • Pour the mixture in a big tray and keep in freezer.

  • After  1 hr, take the tray and again mix the mixture and keep it again in freezer and repeat this process 3 to 4 time every 1 hr interval.
  • Then leave it overnight.
  • Next day delicious mango icecream is ready to be served.

Mango Pickle - Instant / Mangai Urukai


When anybody say pickle, the first thing I will ask is, whether it is Mango Pickle... Because I love it so much. My Mom does not used to prepare only this easy one whenever I ask for pickles. This is very easy and tastes great always. But whenever I prepare this, it will not last long, as I will finish it, in 2 days maximum....


Ingredients

  • Raw Mango - 2
  • Chilli powder - 1 tsp
  • Salt - 1/2 tsp
  • Fenugreek seeds - 1/2 tsp
  • Mustard seeds - 2 pinch
  • Urud dal/Black gram - 1 tsp
  • Oil- 3 tsp
  • Asafoetida - 2 pinch
  • Curry leaves - few



Method

  • Wash the raw mango.


  • Cut the mango into small small pieces, as shown in the picture.



  • Keep it in sun for 20 to 30 mts or in a dry place in order to dry it for 1 hr.



  • Add the Chilli powder and salt and mix well.


  • Mean while, dry roast the fenugreek seeds and powder it.
  • In a small pan, add oil, mustard seeds, when it splutters add, urud dal, fenugreek powder and asafoetida and curry leaves.



  • Add this mixture to the mango pieces.



  • Mix well and store it in a air tight container or start eating as I do.

Mango Jam

Mango Jam is very easy to prepare yet very tasty. In all the fruits, mango always have a special place in our home. We bought many mangoes and I was telling to my mom, I am planning to make Jam. She didnt say anything that time. After shopping, I felt a bit tired and slept a while. When I woke up, my mom gave this yellow sparkling beauty and asked me to taste.... mmmhhh I really felt heavenly... that too from mom's hand..... I could not take the step by step pictures, just presenting the final picture alone...


Ingredients

  • Mangoes - 2 ripe
  • Sugar - 1 cup (adjust according to sweetness of mango)
  • Lemon juice - 1 tsp


Method

  • Grind the mangoes and make a paste.
  • In a big pan add the mango paste, sugar and keep on stirring it, till it becomes thick.
  • Now add the lemon juice and stir for 5 min.
  • Allow it to cool and store in a airtight container.
  • Use dry spoon in future.

Mango Payasam / Mango Kheer



Ingredients

  • Ripe Mango - 1
  • Condensed Milk - 1/2 tin
  • Warm Milk - 1 cup
  • Ghee - 2 tsp
  • Raisins - few
  • Cashew nuts - few
  • Saffron - few strands
  • Cardamom powder
  • Water - 3 to 4 tsp




Method

  • Cut the mango and make a paste in blender with little water.
  • In a pan, add ghee and fry the raisins and cashews till golden brown and keep it aside.
  • Now in the same pan add some more ghee and pour the mango paste and stir continuously until it thickens a little.
  • Now add the condensed milk and warm milk and stir well.
  • Add the cardamom powder, saffron and allow to boil for 5 min.
  • Switch off the stove and add the raisins and cashews.
  • Decorate with few strands of saffron and serve hot.

How to make Mango Lassi Recipe

Ingredients
  • Ripe Mango - 1
  • Curd/Yogurt - 2 cup
  • Sugar - as required
  • Chilled water - as required
  • Rose water - 1 tsp (optional)
  • Ice cubes - 1 cup (optional)
Method
1. Peel the mango skin.
2. Cut into cubes.
3. Blend in the blender with the curd, sugar and mango cubes.
4. When it is smooth, serve it chill.

Delicious Mango Lassi is ready to be served...
