Lamb masala

Mutton Masala is one of my favorite in mutton recipes, and I used to order this when we go to the Anjappar Hotel. This tastes good for any Biryani or Puloa or Naan. I planned to try this but somehow got delayed and I always end up making Mutton Kuzhambu or mutton pepper fry. So last week, I decided to try this Mutton Masala and I fulfilled my long time wish. he he he... So here goes the recipe...

How to make Mutton Masala

Preparation time: 10 min | Cook Time: 40 min | Serves: 5

Ingredients

To Saute and Grind
Onion - 2 big
Tomato - 2 big

To Temper / Spices
Cumin seeds - 1/5 tsp
Cloves - 4 to 5
Bay leaf - 1 crushed
Cinnamon stick - 1 (around 2 inch - crushed)
Fennel seeds - 3/4 tsp
Star anise - 2

For Masala
Mutton - 1/2 kg
Chilli powder - 2 tsp
Coriander powder - 1 tsp
Turmeric - 1/5 tsp
Black Pepper - 1/3 tsp (freshly ground )
Oil - 5 tbsp
Curry leaves - 2 strands
Garlic - 4 to 5 cloves (chopped finely)
Ginger - 1/2 inch piece (chopped finely)
Salt - as per taste
Coriander leaves - for garnishing
Water - 3 cups ( or as per req consistency )


Method
1. Wash the mutton with salt 4 to 5 times nicely and filter the water completely and keep aside. In a wide vessel or kadai, add 1 tsp oil and add the onions. When they are translucent, add in the chopped tomatoes.

2. Saute the onion and tomato nicely and transfer them to a food processor and add 1/2 cup water.

3. Grind the onion tomato to a coarse paste and keep aside. In a pressure cooker, add 2 tbsp oil and add the mutton pieces. Saute the mutton for a while.

4. The mutton leaves out some water and at that time, add in the onion tomato paste.

5. Add 1.5 cups of water for the mutton to cook. Add salt and pressure cook the mutton for 5 whistles. When the pressure cools down, add in the chilli powder, coriander powder and turmeric powder.

6. Allow them to boil, till oil oozes out. Switch off the stove.

7. In a wide vessel or kadai, add the remaining oil and add the tempering items one by one. Add the finely chopped ginger and garlic. Fry them for a min.

8. Add the curry leaves and fry it. Transfer the mutton gravy to this.

9. Add the remaining 1 cup of water and allow them to boil. Add the freshly ground black pepper.

10. Add in the coriander leaver and when the oil oozes out again, switch off the stove.

11. Serve the yummy mutton masala.

Notes:
1. While sauting the onion and tomato, we can add green chillies also and it gives more spicy mutton masala.
