Dish Name Starts with V


Very simple rules to follow...

Ingridients
Vazhuthananga/Brinjal-2 (diced to small pieces)
Pearl Onion/kochu ulli-10 nos
split Green chilly-3 nos
Tomato-1 big
Grated coconut- 1/2 cup
Chilly powder-1/2 tbsp 
Coriander powder-1 tbsp
Turmeric powder-1/2 tsp
Garam masala-1/2 tsp
Mustard seed
Curry leaves
Red chilly
Oil

Preparation:
  1. In a heavy bottom pan add two tbsp oil and add in the onion.Stir and saute.
  2. Next add the cut Vazhuthananga and Green chilly . Saute.
  3. When the Vazhuthananga is half cooked add in the Tomatoes and saute till soft and oil separate.
  4. In another pan fry the grated coconut without oil. The coconut should not be burned but should have a even brown colour. The add the powders into the fried coconut and saute and lave aside to be cooled.
  5. After the fried coconut with powders have cooled grind to a fine paste.
  6. Add this paste to the cooked onion vazhuthananga mixture.Add enough water.
  7.  Cook under low fire.Stir occasionally ,When it is completely cooked add in the garam masala.
  8. For Tempering:Heat oil in a pan ,add the mustard seed ,when it splutters add in the curry leaves and Red chilly.
  9. Pour this on to the curry.
