Dish Name Starts With U


Very simple rules to follow...
--> The dish name must start with U
--> any no. of archived and new entries accepted
--> link the post to the announcement page
--> try to use the logo
--> attach the photo or url in the mail - entries without this, will not be accepted

Round-Up 

A recipe from non-blogger Bini Basheer, which she prepared for the Iftar.

INGREDIENTS

FOR OUTER COVERING

Medium ripe banana (plantain)  -  7
Salt -  a pinch
water - a little

FOR FILLING

Coconut (grated) - 1 cup
Eggs - 3
Sugar - 6 teaspoon
Cardamom powder - a pinch
Cashew nuts (crushed) - few
Raisins -  few
Ghee - 1 tablespoon
Oil (for frying) - accordingly

PREPARATION

OUTER COVERING

a)  Cut each plantain into three or four pieces and pressure cook the cut plantain pieces using little water till soft (about 1 whistle is only required)
b)  Peel off the skin and mash the plantain pieces well with your hands without any lumps (never use a blender or mixer)
c)  Make lemon sized balls out of mashed plantains
d)  Grease your palm using ghee or oil and flatten the lemon sized plantain balls in your palm using fingers and keep it aside

FILLING

a)  Beat the eggs well with sugar and cardamom powder and keep it aside.
b)  Heat ghee in a pan and roast the cashews and raisins and keep it aside
c)  In the same pan, add more ghee (if required) and saute coconut until it's raw smell goes
d)  Add the beaten egg mix to it and stir well till the egg is scrambled well
e)  Add roasted cashews and raisins to it and mix well.

ASSEMBLING

a)  Take a flattened plantain and place scrambled coconut - egg mix on it.
b)  Close and roll it in oval long shape and keep it aside
c)  Repeat the same with remaining flattened plantain balls and the coconut - egg filling
d)  After you have done with filling, heat oil in a pan
e)  Deep fry in medium flame till it turn golden brown in colour.

Sweet "UNNAKAI" is ready....Yumm...My mouth is watering...Do give a try and enjoy...

Notes

Let me give some useful tips related to our sweet "UNNAKAI"

a)  Mash the cooked plantains using hands itself..Never ever use a grinder or mixer as it truly spoils the taste and texture of plantain covering
b)  Make sure the mashed plantain is lump free..Mash it well.
c)  Use only medium ripe banana for tasty unnakai.
d)  Care is needed while frying..Just fry till golden brown in medium flame. There is a chance of getting burned
e)  Care is needed while closing and ovaly rolling the unnakai...Make sure that the outer covering will not break while frying.
